<p class="wp-block-paragraph">じゃがいもの増え方は奇っ怪である。<br>芽が出たいもを埋めておいたら葉っぱが出てきて、それが枯れ始めるころには、土の中にゴロゴロと増えたいもが転がっている。</p>



<p class="wp-block-paragraph">じゃがいもはヨーロッパに16世紀に持ち込まれたが、その太り方や増殖のしかたを当初西洋人は気味悪がったという。食味が悪かったり、ソラニン毒が多かったり、というのもあるだろうが、何といっても聖書にじゃがいもの記述がなかったのが、西洋人の疑心暗鬼に拍車をかけたとかなんとか。<span class="fz-14px">(参考：『世界の野菜を旅する』玉村豊男 講談社現代新書 p50-55)</span></p>



<p class="wp-block-paragraph">僕はじゃがいもを恐れてはいないし、改良が重ねられて美味しくなったじゃがいもは進んで食べたいと思っているが、確かにじゃがいもの増え方はよくわからない。ので、それを確かめようと思って今年の春は種芋を埋めておいた。</p>

<p class="wp-block-paragraph">ナス科の葉を狙って飛んできたテントウムシダマシに多少荒らされたりもしたが、5月頃には可憐な花が咲き、6月頭、梅雨から逃げ切るように収穫。</p>

<p class="wp-block-paragraph">地植えの分は多少虫に齧られたりしてしまったけど、概ね綺麗な肌ツヤ。これは皮付きでいただきたいところ。</p>



<p class="wp-block-paragraph">また、深めのプランターでも少しだけ育てたものは、虫に食われることなく、綺麗なものが採れました。</p>



<p class="wp-block-paragraph">結局、じゃがいもの増え方が分かったかと言われると、そりゃ袋なりダンボールに詰められたじゃがいもしか知らなかった頃に比べると分かったかもしれないけど、やっぱり謎ですね。</p>



<p class="wp-block-paragraph">それより、食べましょう。そうしましょう。じゃがいもを華やかにしてくれる庭のハーブと共に。</p>

<p class="wp-block-paragraph">セージの薬のようで甘くスッキリした香りに僕は毎度クラクラ来てしまい、その度に夢中になってしまうのですが、去年<a rel="noopener" href="https://note.com/cardamon26/n/nbe4d82198b3a" target="_blank">noteで書いた</a>ように、最初に植えたセージは虫に食い荒らされてしまってロクに味わうこともできませんでした。雪辱を果たすべく秋から植えたセージは地植えにしつつ、不織布で周囲をガード。虫が入ってこれないようにしました。</p>



<p class="wp-block-paragraph">それが功を奏したのか、今年の春には大増殖で採りたい放題。ああ、こんなに嬉しいことはない。</p>



<p class="wp-block-paragraph">セージといえば豚肉ですが、じゃがいもと合わせると淡白さに倦むことなく最後までいただけます。セージそのものも美味しく食べられるので、一緒に揚げてしまいましょう。</p>

<p class="wp-block-paragraph"><strong>1.</strong>じゃがいもは皮付きのまま食べられそうならよく洗い、そうでないなら皮をむいて、一口大ぐらいに切る。</p>



<p class="wp-block-paragraph"><strong>2.</strong>20cmぐらいの小さいフライパンにじゃがいもを入れ、油をじゃがいもが1/3〜半分ぐらい浸かるまで注ぎ、中火にかける。</p>

<p class="wp-block-paragraph">掘りたて、揚げたて、<strong>産地直送1分。</strong>どのポテトスナックの追随も許さない新鮮さ。</p>



<p class="wp-block-paragraph">きれいな肌なのでやっぱり皮付き！歯ざわりサクッとしてるのに、もっちりとした中身。ねっとりと舌に甘みが絡みつきます。</p>



<p class="wp-block-paragraph">塩すらいらないかもしれないぐらいで、撮影前に揚げたてを何個もつまみ食いしてしまいました。</p>



<p class="wp-block-paragraph">パリッと揚がったセージもスナック感覚で旨く、もっと入れればよかったと後悔。フーッと鼻を抜ける香りは香ばしくも清涼感に溢れ、ほっこり甘いじゃがいもが引き立ちます。</p>



<p class="wp-block-paragraph">パルメザンチーズでも散らそうかと思ったけどやめました。確かに旨いだろうけど、野暮というもの。ごまかし不要のおいしさです。</p>

<h2 class="wp-block-heading"><span id="toc5">ローズマリーと、いも。</span></h2>



<p class="wp-block-paragraph">数年前、昔働いていたところのメンバー4人で、クリスマスディナーに出かけたとき、そこで供された<strong>ローズマリーの香りがついたフライドポテト</strong>への評価は2分されました。<br>スパイスにもハーブにも慣れっこの2人がその味を支持し、残りの2人は<strong>よそ行きの風味</strong>をまとったいもによそよそしさを感じたのか、あまり手が伸びていませんでした。普段気安い関係であったいもが急におしゃれをしたものだから、戸惑ったのでしょう。</p>



<p class="wp-block-paragraph">ローズマリーの風味がついたフライドポテト、僕は好きなんだけどなぁ。</p>



<p class="wp-block-paragraph">ということで二品目はローズマリーとじゃがいもです。またフライドポテト……でもいいんだけど芸がないので豚肉と合わせます。</p>

<p class="wp-block-paragraph"><strong>1.</strong>冷蔵庫から出して常温に戻したら、豚肉に貼り付けたセージをはがし、食べやすい大きさに切って塩、小麦粉をまぶす。</p>

<p class="wp-block-paragraph"><strong>2.</strong>じゃがいもは一口大に切って600Wのレンジで3分ほどチンしたら、塩(分量外)を軽くまぶしておく。<br>ミニトマトはヘタを取って、包丁を1カ所刺しておく。</p>

<p class="wp-block-paragraph">フタを開けるとローズマリーに悩殺されんばかりの豊潤な香り。パーティーなんかで食卓に持って行って開けると喝采間違いなしでしょう。</p>



<p class="wp-block-paragraph">芋っぽさが一気に垢抜けるのがローズマリーマジック。よそ行きのドレスをまとったじゃがいもも、洒脱で良いものです。<br>豚の旨味とハーブの風味を湛えたオイルにフランスパンを浸すともう仰け反ってしまいます。これはぜひ用意していただきたい。</p>



<p class="wp-block-paragraph">セージを貼り付けた上にローズマリーを纏わせたらさすがに豚の臭みもなく、ロース肉の醍醐味である淡白さと脂身の対比を存分に味わえます。<br>味付けは塩だけでも、ハーブがあれば、他の調味料はいらないんだとよくわかる一皿。</p>

<p class="wp-block-paragraph">じゃがいもを育てたから分かることとしては、親指の先〜小指の先ぐらいの小さいいもがコロコロ採れるということ。商品の「じゃがいも」しか見たことなければ、一生気づきません。</p>



<p class="wp-block-paragraph">そんなこいもはよく洗って丸ごと揚げちゃうのが吉。今年から育て始めたえごまが丁度いい具合に育ってきたので、一緒に炒めます。</p>

<p class="wp-block-paragraph"><strong>1.</strong>じゃがいもはよく洗って皮付きのまま冷たい油からじっくり揚げる。もしくはレンジで軽くチンしてから油で揚げ、串が通るぐらいになったら一度取り出す。<br>上の<strong>「フライドポテト セージ風味」</strong>を揚げた油を流用すれば経済的です。</p>

<p class="wp-block-paragraph">うまいけど、淡白で飽きがくるじゃがいもには、ハーブの衣装を着せるのが効果的です。普段フライドポテトの類は避けており、マクドでもセットを頼まないし、ファミレスなり居酒屋で「とりあえずフライドポテト」はやらないのですが、掘り立て産地直送1分の新鮮なじゃがいもとなれば話は別です。</p>



<p class="wp-block-paragraph">3.5kg弱採れましたので、まだまだなくなりそうもないですが、ハーブがあれば完食街道まっしぐらです。それではまた。</p>
