<p>こんにちは。ハセガワタクミ(カルダモン26)です。今週は、<br>ロース肉にまとわせたスパイスがふわりと香る、新感覚の生姜焼き<strong>「スパイス生姜焼き〜とろとろナスと共に〜」</strong></p>



<p>卵が丸々1個入った贅沢感たっぷりのお味噌汁にブラックペッパーをふりかけた<strong>「まるごと卵と白菜の味噌汁」</strong></p>



<p>クミンと酢の意外な相性の良さに、ごぼうの濃い風味がピタリとハマる<strong>「クミン酢ごぼう」</strong></p>

<h4 class="wp-block-heading">定食のポイント</h4>



<p>「スパイス生姜焼き」は、生姜焼き用の程よい厚みの豚ロース肉に、小麦粉と共にスパイスをまぶします。<strong>豚の臭みが消え、ふわりとスパイスが香る生姜焼きは新感覚</strong>です。</p>



<p>焼き方にも気を遣い、柔らかく仕上げます。<br><strong>とろとろナス</strong>と合わせれば<strong>、ご飯があっという間になくなります。普段より多めに炊いてください。</strong></p>



<p>「まるごと卵と白菜の味噌汁」は、<strong>白菜だけでは少し寂しかった味噌汁に、卵を落とすと一気にごちそう味噌汁に。</strong>「おかずのクッキング」で土井善晴さんが作っていた卵の味噌汁がとても美味しかったので、今回の定食に加えてみました。</p>



<p>「クミン酢ごぼう」は、以前の定食で作った「クミン酢れんこん」の派生レシピになります。とはいえ、<strong>れんこんにはない力強いごぼうの風味がクミンと手を取り合い、また違う魅力のある味わい</strong>になりました。</p>



<h2 class="wp-block-heading">今回の定食のつくりかた</h2>



<h3 class="wp-block-heading">主菜：スパイス生姜焼き〜とろとろナスと共に〜</h3>

<p>柔らかいお肉を噛んだとき、お肉にまぶしたスパイスがふわりと香ります。<strong>片面に焼き目をつけたら、裏側はサッと焼きで柔らかく仕上げましょう。</strong></p>



<p>甘くない生姜焼きのタレは、スパイスとの相性も良好でご飯が進みます。</p>

・豚ロース肉・・・・200g(生姜焼き用)
・塩・・・・・・・・1g
・クミン・・・・・・小さじ1/2(1.25g)
・コリアンダー・・・小さじ1/2(1g)
・小麦粉・・・・・・小さじ2

〈とろとろナス〉
・ナス・・・・150g(4～6つに縦割り)
・小麦粉・・・小さじ2

・油・・・・・計大さじ1と1/2

・シナモンスティック・・・1/2本
・八角・・・・・・・・・・1片

〈生姜焼きのタレ〉
・しょうが・・・5g(すりおろし)
・醤油・・・・・大さじ1
・みりん・・・・大さじ1
・酒・・・・・・大さじ1
・玉ねぎ・・・・50g(くし切り)

・キャベツ・・・お好きな分だけ(千切り)</pre>



<p>【手順】<br>1.豚ロース肉に塩、クミン、コリアンダーをまぶし、小麦粉を打つ。<br>ナスは縦割りにしたあと10分ほど水にさらす。ナスの水気を拭いたら小麦粉を打つ。<br>〈生姜焼きのタレ〉の材料は混ぜておく。</p>

<p>2.フライパンに油の分量のうち、小さじ2を中火で熱し、ナスを焼く。皮の色が鮮やかになり、焼き目をつけたら取り出す。</p>

<p>3.残りの油をフライパンに中火で熱し、豚ロース肉は盛り付けの表面になる方から焼く。焼き目がついたらひっくり返して、裏面にはサッと火が通るまで焼いたら取り出す。</p>

<p>4.残った脂で八角とシナモンを中火で熱する。シナモンの周りがシュワシュワと泡立ち、香りが立ってきたら玉ねぎを炒める。透き通ってきたらナスと豚ロースを戻し入れる。生姜焼きのタレをかけ、煮詰めたら完成！</p>

<h3 class="wp-block-heading">汁物：まるごと卵と白菜の味噌汁</h3>

<p>白菜を煮込んで、味噌と溶いたら卵を落とすだけでごちそう味噌汁に。卵は一つずつ落とさないと、とんでもないことになるので注意してください。</p>



<p>よりキレイに作りたいあなたは、ポーチドエッグを作ってから乗せてください。</p>

・白菜・・・・・80g(ざく切り)
・にんじん・・・20g(短冊切り)
・卵・・・・・・2個

・水・・・・・・400cc
・だしの素・・・2g

・味噌・・・・・大さじ1
・ブラックペッパー・・・10粒(約0.5g)

〈ポーチドエッグを作る場合〉
・水・・・たっぷり
・酢・・・大さじ1</pre>



<p>【手順】<br>1.鍋に水とだしの素、にんじんを入れて火にかける。<br>沸いてきたら白菜を入れ、さらに煮込む。</p>



<p>2.具材が煮えたら火を弱め、味噌を溶き入れる。</p>



<p>3.もう一度火にかけ、<strong>お玉</strong>を鍋に入れてその<strong>上に卵を落とす</strong>。<strong>固まり始めたらそーっとお玉から落とし、白身が固まれば完成。一人前ずつやるのがよい</strong>でしょう。お椀に盛り、ブラックペッパーを振りかける。</p>

<p>4.卵をキレイに仕上げたい場合は、ポーチドエッグを別の鍋で作る。<br>鍋に水と酢を入れて沸かしたら、菜箸などでかき混ぜ、水の流れを作る。卵をボウルなどに一度割り入れたら、水流の中心に落とす。沸いてきたら火を止め、フタをして3分蒸らす。</p>

<p>クミン×酢の意外な美味しさに、ごぼうの力強い風味がピタリとハマる酢ごぼう。<br>ジューシーな生姜焼きの脂を切って、また次の一口へ。</p>

・ごぼう・・・・50g(四つ割り)

〈調味液〉
・酢・・・・・・小さじ2
・砂糖・・・・・小さじ1
・淡口醤油・・・小さじ1/2
・塩・・・・・・少々

〈仕上げのスパイス〉
・クミンシード・・・ひとつまみ(0.5g程度)
・金or白ごま ・・・・ふたつまみ(1g程度)</pre>



<p>【手順】<br>1.ごぼうは皮をよく洗い、3cm幅程度に切ったあと、四つ割りにする。<br>水に10分ほどつけ、アクを抜く。</p>



<p>2.鍋にごぼうが浸かるぐらいの湯を沸かし、10分茹でる。</p>

<p>3.茹でている間に、〈仕上げのスパイス〉はフライパンで3分ほど乾煎りする。〈仕上げのスパイス〉をミルで挽き、〈調味液〉と混ぜておく。</p>

<p>4.ごぼうをザルに上げ、熱いうちに〈調味液〉に漬ける。粗熱が取れたら保存容器に入れ、冷蔵庫へ。</p>



<p>5.食べる前にお皿に盛り付け、軽く〈調味液〉をかける。</p>

<p>【手順】<br>1.木綿豆腐はクッキングシートをかけた上から重しを乗せ、水を切る。<br>水気を切ったら、フライパンに油を中火で熱し、豆腐を焼く。その後、8等分に切る。</p>



<p>ここまでは、<strong>焼き豆腐を買って代用しても大丈夫</strong>です。</p>

<p>2.牛肉に塩、ブラックペッパー、小麦粉をまぶしておく。<br>フライパンに油を弱めの中火で熱し、にんにく、八角、クローブを熱して香りを出したら、牛肉を入れて、色が変わるまで焼く。</p>

<p>3.片手鍋にスパイスと脂ごと牛肉を移し、玉ねぎと醤油、酒、みりん、砂糖、水を入れて、<strong>密閉できるフタ</strong>をして、弱火で20分煮込む。途中で一度、フタを持って鍋を振る。</p>

<p>4.20分経ったら、焼いた豆腐を入れて、また密閉できるフタをして15分弱火で煮込む。</p>

<p>5.一度冷まし、味を染みさせる。食べる前に再加熱する。クローブ、八角は取り除く。<br>八角は飾りになるし、硬くてどうせ食べられないので置いておいてもいいですが、クローブは食べるとその渋さに悶絶必至。クローブは取りましょう。</p>



<p><strong>食べる前日に作っておくと、翌日の楽しみになりますよ。</strong>食べるまで時間が空く場合は冷蔵庫で保存してください。</p>

<p>食べてすぐは普段の酢れんこんと変わらないのに、クミンシードに当たれば、それは新発見の味わい！今回は簡単にできる調味酢を使いましたが、ご家庭のレシピ、ネットにある他のレシピにクミンシードを入れても。</p>

・れんこん・・・100〜150g

〈漬け酢〉
・調味酢・・・・・・100cc
　(例：ミツカン カンタン酢)
・<strong>鷹の爪</strong>・・・・・・1本
・<strong>クミンシード</strong>・・・ひとつまみ</pre>



<p>【手順】<br>1.れんこんは0.5mm以下の薄めの半月切りにし、10分ほど水にさらす。<br>小鍋に湯を沸かし、れんこんを入れて沸騰したらすぐに火を止め、ザルに上げる。</p>

<p>2.小鍋に調味酢と鷹の爪、クミンシードを入れ、軽くひと煮立ちしたら、熱いうちに酢とれんこんを合わせ、粗熱が取れたら冷蔵庫で保存する。</p>



<p>3時間以上寝かせて味を染みさせる。2～3日は冷蔵庫で持ちます。</p>

<p>夏の忘れ物のように、まだ農協では売られていたので購入。<br>塩で食べたら、こんなにオクラって美味しかったのか！？と驚きます。<br>風味豊かな黒ごまと、ほんのり甘い香りのフェヌグリークをちょっぴり。</p>

・オクラ・・・50g
・塩・・・・・0.5g
・黒ごま・・・3g

・<strong>フェヌグリークパウダー</strong>・・・少々</pre>



<p>【手順】<br>オクラはガクを剥いておく。<br>小鍋に湯を沸かし、オクラを2分ゆがいたら、冷水に取る。<br>オクラを斜めに3〜4つに切り、すりごまにした黒ごまと少々のフェヌグリーク、塩で和えたら完成。</p>
