<p>こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、アジでやることが多い<strong>「南蛮漬け」</strong>を、たっぷりの<strong>スパイス</strong>と共に、<strong>サバ</strong>で作ってみました。</p>



<p><strong>ピクルス</strong>によく使われる<strong>スパイス</strong>を中心に使い、風味よく仕上げた南蛮酢は<strong>サバの青さをしっかりカバーしてくれ、サバの旨みをしっかり味わうことができます。</strong></p>

<p>酢が効いて暑い時季になれば食べたくなる<strong>「南蛮漬け」</strong>。<br>大抵アジか鶏で作られていて、それらはもちろん美味しいのだけど、<strong>サバでもできないかな？</strong>と思って作ってみました。</p>



<p>サバは片栗粉をまぶして焼き、皮の香ばしさをプラス。<br>たっぷりのスパイスはピクルスによく使われるものなので、酢とよく合います。<br><strong>スパイス</strong>たちは様々な風味でピリッと<strong>南蛮酢を引き締め</strong>てくれ、青さが目立つサバでも、しっかり美味しい南蛮漬けに。</p>



<p>しっかり南蛮酢を吸ったサバはご飯のおかずとしても、お酒のアテにもピッタリ。<strong>衣からじんわり出汁感が染みてくるのも美味しいです。</strong></p>



<p>一緒に浸けた味しみ&amp;トロトロのナスも最高で、スパイス南蛮酢を存分に味わえました。</p>

<p>今回は<strong>ピクルスに使われるスパイスを南蛮酢</strong>に入れ、<strong>青さが目立つサバを美味しく</strong>いただけるようにしました。</p>



<p>マスタードシードやしょうが、唐辛子などで<strong>ピリッと締まった風味が、サバの旨みを引き立てます。</strong></p>



<p>さらに加えたのが、<strong>フェンネルシード。</strong>ピクルスによく入っているスパイスですが、<strong>魚とも相性がよい</strong>スパイスです。</p>



<p><strong>噛んだ時に広がる甘みとスッキリ感がサバの脂のこってり感をリセット。</strong><br>次の一口を誘います。<br>サバだけでなく、ナスとも合ってとても美味しいです。</p>



<p>ただ、フェンネルシードは、<strong>ハマる人はハマります</strong>が、<strong>少々クセのあるスパイス</strong>ですので、<strong>お好みで</strong>どうぞ。</p>

・塩サバ・・・・300g
　<span class="fz-14px">もしくは生サバの切り身300g＋塩3g</span>
・酒・・・・・・大さじ1

・ナス・・・・・300〜400g
・片栗粉・・・・大さじ1×2回分

・ししとう・・・10本(約45g)
・油・・・・・・大さじ2～3
　<span class="fz-14px">野菜はお好みのものをどうぞ</span>

〈南蛮酢〉
・鷹の爪・・・・・・・・1本
・マスタードシード・・・1g
・ブラックペッパー・・・5〜6粒
・フェンネルシード・・・1g(好みで)
・カルダモン・・・・・・2粒
・しょうが・・・・・・・5g(千切り)

・カツオと昆布出汁・・・80cc
　<span class="fz-14px">もしくは水80cc＋出汁の素1gぐらい</span>
・酢・・・・・・・・・・80cc
・砂糖・・・・・・・・・大さじ3
・醤油・・・・・・・・・40cc
・みりん・・・・・・・・40cc

<p><span class="fz-16px">・水・・・・・・500cc<br>・昆布・・・・・5g<br>・かつお節・・・5g<br><br>水に昆布を30分以上浸けたあと、10分以上かけて弱火～弱めの中火で<strong>沸騰させないように</strong>煮出したら、昆布を取り出して沸騰させ、かつお節を入れて2～3分置き、ザルとペーパーを使って濾す。<br>余ったら味噌汁やカレーなどに使ってください。</span></p>

<h2 class="wp-block-heading">焼きサバのスパイス南蛮の手順</h2>



<p><strong>1.</strong>南蛮酢を作る。<br>マスタードシード、ブラックペッパー、フェンネルシード、カルダモン、は瓶の裏やすり鉢などで軽く潰しておく。<br>小鍋に〈南蛮酢〉の材料を全て入れて火にかけ、沸騰させたら火を止める。</p>

<p><strong>2.</strong>塩サバは食べやすい大きさ<span class="fz-14px">(幅3cmぐらい？)</span>に切り、酒をまぶして5～10分ほど置く。<br>キッチンペーパーなどで<strong>水気を拭きとり</strong>、片栗粉大さじ1をまぶす。</p>

<p>ナスは一口大より少し大きめの乱切りにし、水につけてアクを抜く<span class="fz-14px">(気にならない方はアク抜きしなくても大丈夫です)</span>。<br>水気を拭きとったら片栗粉大さじ1をまぶす。</p>



<p>ししとうはフォークなどで穴を開けておく。</p>

<p><strong>3.</strong>フライパンに油を熱し、ナスの皮目から焼く。皮の色が鮮やかになったらひっくり返し、ししとうを入れて焼く。</p>



<p>油がナス全体に行きわたり、しなっとしてきたら取り出す。</p>

<p><strong>4.</strong>フライパンに油が足りなければ補い、サバを焼く。<br><strong>魚焼きのグリル</strong>があれば、<strong>3.</strong>のナスを焼くのと同時に焼いても。<br>皮がこんがり焼け、身に火が通ったら取り出す。</p>

<p><strong>5.</strong>サバとナス、ししとうがまだ<strong>温かいうちに</strong>保存容器に入れ、<strong>〈南蛮酢〉を注ぐ。</strong><br>出汁をひくときに使った<strong>昆布があれば、一緒に入れてもいい</strong>と思います。</p>

<p>こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回はちょっとビターな香味と酸味で、サバのうまさが引き立った、<strong>「スリランカ風サバカレー」</strong>をご紹介します。</p>

<p><strong>スリランカ</strong>は日本と同じく<strong>島国</strong>。魚が豊富で、かつお節(モルディブフィッシュ)を使うぐらいですから、<strong>スリランカ料理と魚は切っても切れない</strong>関係があります。</p>



<p>今回ご紹介するサバカレーは、スリランカらしいゴラカの酸味と燻製香が効いたカレー。<br>カレーそのものよりは、美味しさを引き立てるソースをまとわせたサバを食べるような感覚です。</p>

<p>サバの身をほぐしてカレーと絡ませ、パラパラのライスと混ぜると、カレーの香味とサバの旨み、ライスの甘みと色々混じって口の中が賑わいます。</p>

<p>【手順】<br><strong>0.(前日準備)</strong>ゴラカを使う場合は水に一晩漬けて切りやすいようにする。</p>

<p><strong>1.</strong>サバを<strong>霜降り</strong>する。<br>サバの両面に塩を振り、水気が浮いてくるまで10分ほど置く。<br>水気を拭き取り、沸騰させた、たっぷりの湯を大きめのボウルに張る。<br>切り身を湯に入れ、表面の色が変わったら身が反る前に取り出し、水気を拭う。</p>

<p><strong>3.</strong>フライパンにココナッツオイルとサラダ油を中火で熱し、シナモンスティック、カルダモンを入れて、シナモンがシュワシュワして香りが立つまで熱する。</p>

<p><strong>5.</strong>サバのマリネを入れてサッと炒めたら水を注ぎ、沸騰したら<strong>弱火</strong>にして<strong>フタをして10分</strong>煮る。<strong>途中、フタを開けてサバに煮汁をかける。</strong><br>このとき、サバは<strong>皮を上にして煮る。</strong>下だと皮がボロボロになります。</p>

<p><strong>6.</strong>ココナッツミルクとトマト、醤油を入れて、トマトが軽く崩れてくるまで煮込んだら味見をし、足りなければ塩を補う。<br><strong>苦味が強く立っていたら塩が足りないサイン</strong>です。</p>
