<p><strong>カブの食感、噛みしめて。</strong></p>



<p>こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、スライサーでひらひらと薄くした<strong>カブのシャキシャキ食感を楽しむマリネサラダ</strong>のご紹介です。</p>



<p><strong>ドレッシングにはセロリシード</strong>を使い、噛んだ時の香りをプラス。<br>あと引く香りは食欲をそそり、酸味の効いたドレッシングも合わさって、前菜にも、口直しにもピッタリ。</p>



<p><strong>作ってすぐ食べるより、ちょっとなじませてから食べるのが美味しい</strong>ですよ。</p>

<p>他に使用法がないかなと調べていると、<strong>ドレッシングに使う</strong>のがよいとのこと。<br>旬を迎え美味しくなってきたカブとトマトを使ったサラダにかけてみることにしました。</p>

<p>スライサーでおろして、<strong>ひらひら、シャキシャキのカブ</strong>をしっかり噛んでいると、<strong>セロリシードのビターな風味が広がります。</strong><br>ビターといっても、<strong>香草風味が広がって食欲をそそり</strong>、酸味の効いたドレッシングと相まって、お口の中をリセットしつつ、次の一口を誘います。</p>



<p>カブの食感と、セロリシードの風味を感じるために、よく噛んで食べたいサラダになりました。</p>



<p>写真に収めた後で気づきましたが、<strong>ブラックペッパーを振って食べると、また香りが豊かになる</strong>のでおススメです。</p>

<h4 class="wp-block-heading">ちょっとなじませてからのほうが美味しい</h4>



<p>レタスやベビーリーフなどを使った葉物サラダではないので、すぐ食べるより、<strong>ドレッシングをなじませてからのほうが美味しい</strong>ように感じます。</p>



<p>若干、<strong>カブの浅漬けのような感覚もある</strong>でしょうか。<br>鷹の爪を入れてみるのも面白いと思います。</p>



<h4 class="wp-block-heading">セロリシードは入れすぎ注意！</h4>



<p>これまでセロリシードは、火を通し、なおかつトマトたっぷりの料理にしか使っていなかったのであまり気になりませんでしたが、結構苦いスパイスです。</p>



<p>ドレッシングのように、<strong>セロリシードをそのまま食べるようなときは、かなり控えめに使う</strong>のがポイントです。</p>

・トマト・・・1個(だいたい100g)

〈セロリシードのドレッシング〉
・セロリシード・・・・<strong>0.2〜0.3g</strong>(ビンから2～3振り)
・酢・・・・・・・・・大さじ1
・レモン汁・・・・・・小さじ1
・薄口醤油・・・・・・小さじ2
・オリーブオイル・・・小さじ2～

〈あとがけ〉
・ブラックペッパー・・・お好きなだけ</pre>



<h2 class="wp-block-heading">ひらひらカブのマリネサラダの手順</h2>



<p><strong>1.</strong>カブは皮付きのまま半分に切った後、スライサーなどで薄切りにしたら、塩1gを揉みこんでおく。<br>カブの葉は0.5cmぐらいに刻んで、別のボウルで塩0.5gを揉みこんでおく。</p>



<p>(写真のカブの葉は100gあるので、塩1gを揉みこんでいます)</p>



<p>5～10分後、カブとカブの葉の水気を絞る。</p>

<p><strong>2.</strong>トマトは半分に切ったあと0.5cmぐらいの薄切りにし、水気を絞ったカブ、カブの葉と同じボウルに入れておく。</p>

<p><strong>3.</strong>〈セロリシードのドレッシング〉の材料を全て混ぜ合わせる。<br>泡立て器などを使って、酢と油が乳化するまでよく混ぜてください。</p>

<p>酢とレモン汁の比率はお好みで変えてください。<br><strong>セロリシードはかなり香るので、控えめに使う</strong>のがポイントです。</p>



<p><strong>4.</strong>野菜を入れたボウルに〈セロリシードのドレッシング〉を入れて混ぜたら、30分以上冷蔵庫に入れておき、味をなじませたら完成。<br>食べるときに風味をプラスしたくなったら、ブラックペッパーをかけても。</p>

<p>トマト煮込みに寄せて、トマト缶をたっぷり使ったカレーにもセロリシードが活躍。<br>昔、トマト缶を入れすぎて失敗したカレーの苦い思い出を払拭してくれるレシピになりました。</p>



<p>先に油で焼いてから加えたナスがトロトロ。鶏肉の旨みも吸って、ナスがとにかく旨いカレーになりました。</p>

<p>シャッキリ食感のれんこんに、ほぐしたささみの柔らかな旨みが広がります。<br>和えるマヨネーズには柚子胡椒と醤油を忍ばせ、このサラダだけで箸が進む味わいに。</p>

<p><a href="https://spicefull-life.com/sasami-japanesepasta/" data-type="URL" data-id="https://spicefull-life.com/sasami-japanesepasta/" target="_blank">和風パスタ</a>に続いて作ったのは、<strong>「ささみ」といえばのサラダ。</strong><br>どうせお肉を入れるなら、<strong>食べ応えがあるサラダがいい</strong>と思い、<strong>食感がしっかりあるれんこん</strong>を合わせます。<br>そして<strong>マヨネーズで和えて、淡白さを軽減。</strong>さらには<strong>柚子胡椒のピリッと感</strong>を加えることで、食欲そそる味付けにしました。</p>



<p>ですが、<strong>できたのは真っ白なサラダ。</strong><br>いや、<strong>別に構わないのですが、さすがに白すぎる</strong>ということで、<strong>パプリカパウダー</strong>をふりかけることに。</p>



<p>すると、<strong>何だか食欲をそそるような色味</strong>になってきました。<br>あとはプチっと弾けたときの香りがあと引く<strong>ごま</strong>と、立体感が出る<strong>糸唐辛子。</strong></p>



<p>辛味や強烈な風味だけでない、<strong>色味としてのスパイスの役割を見直す一品</strong>にもなりました。</p>

<p><span class="fz-14px">※材料欄の〈レンチンささみがないときは〉の材料を参照。<br>ささみにフォークを何回か刺したあと、酒と砂糖をまぶし、耐熱容器に入れて真ん中がふんわり浮くようにラップをかける。</span></p>

<p><span class="fz-14px">500wのレンジで2分チンしたら、ひっくり返して1分30秒チンする。<br>まだ赤い部分が残っていたら10秒ずつ追加して様子を見たら、予熱で5分ぐらい放置して火を通す。</span></p>



<p><span class="fz-14px">ささみを手でほぐし、膜と筋を取る。<br><strong>この方法だとささみに塩味がついていないので、味付けのときの醤油やマヨネーズを少し多めに入れる。</strong></span></p>

<p><strong>2.</strong>れんこんは皮をむき、0.5cmぐらいの厚さに切ったら、いちょう切りにし、酢水<span class="fz-14px">(れんこんが浸かるほどの水に酢ひとまわし)</span>に10分ほどつける。<br>酢水を切ったらラップをして、500wのレンジで3分チンする。</p>

<p>ご飯がおいしい季節、先週に引き続き、またまたご飯ものをメインに。</p>



<p>「ターメリックエビピラフ」は、<strong>コンソメでターメリックライスを炊いたあと、炒めた具材と合わせます。</strong>こうすれば<strong>パラパラしつつも、しっとりとしたピラフ</strong>に。<br><strong>ターメリックで色づいたライスは鮮やか</strong>で、ピーマンやにんじん、エビと一緒に色とりどりの目にもおいしいピラフです。</p>

<p>色とりどりのエビピラフは、<strong>たくさん食べられるように、塩味控えめ</strong>で。お好みで塩を1gを足してください。<br>輸入業者のターメリックは色がしっかり出るのですが、<strong>市販のターメリックは少し色が薄い</strong>です。お使いのターメリックに合わせて、量を加減してください。</p>

<p>1.〈ターメリックライス〉を炊く。<br>密閉できるフタ付きの鍋に、洗って30分ほど浸水した米とにんじん、水、コンソメキューブ、ターメリックを入れて中火にかける。<br>沸騰してきたらよくかき混ぜ、密閉できるフタをして弱火で10分炊く。その後火を止めて10分蒸らす。</p>

<p>2.〈ターメリックライス〉を炊いている間に、ピーマンと赤パプリカは0.5cm角に切る。<br>フライパンにオリーブオイルとマスタードシードを入れ、中火で熱する。弾けてきたらフタをして音が止むまで待つ。<br>音が止んだら、バターを溶かす。むきエビを入れ、片面を焼く。エビの片面の色が変わったらエビをひっくり返す。ピーマン、赤パプリカを入れ、香りが立つまで炒める。</p>

<p>3.〈ターメリックライス〉をフライパンに入れ、ヘラなどでライスをほぐしながら、よく混ぜ合わせる。油が全体によく馴染み、ライスがパラパラとほぐれたら、塩を入れて混ぜれば完成！少し薄めに味をつけるのがポイントです。</p>

<p>【手順】<br>1.まいたけは食べやすいサイズに割く。フライパンにオリーブオイルを熱し、中火でまいたけを焼く。塩を振って味をつけておく。</p>

<p>2.途中ひっくり返し、まいたけの両面が焼けたら取り出す。油が少なければ少し補い、赤パプリカのくし切りを焼き、これも取り出しておく。</p>



<p>3.<strong>水菜は根元の土をよく落とし</strong>、2cmほどの食べやすい大きさに切る。</p>



<p>4.〈ドレッシング〉の材料をよく混ぜる。油と酢が乳化するようによくかき混ぜる。</p>



<p>5.皿に水菜を広げ、焼いたまいたけと赤パプリカを乗せ、〈ドレッシング〉をかければ完成！</p>

<p>ぽかぽかと温まるだけでなく、しっかりとスパイスが効いたパンチのある味わいです。</p>

<p>こんにちは。ハセガワタクミ(カルダモン26)です。今回は旬のさつまいもを和えるだけ簡単の<strong>「フェンネル弾けるポテサラ」</strong>にしてみました。</p>



<h4 class="wp-block-heading">さつまいもといえば</h4>



<p>さつまいもといえば、まず浮かぶのは煮物でしょうか。ほかには天ぷら、スイートポテト、大学いも？</p>



<p>そのどれもが美味しいのですが、なんだか、口の中が<strong>もそっと</strong>しませんか？</p>



<p>それに、食べたあと、余韻があまりに長くて、<strong>いつまでもさつまいもの口</strong>になってしまうこともありませんか？</p>



<p>さつまいものスイーツならまだしも、食事中ならリセットしたいものです。</p>



<p>そんなこともあって、あまり食事にさつまいもを使うことなく、ついつい余らせてしまう方もいるのではないでしょうか。</p>



<h4 class="wp-block-heading">今回のレシピ</h4>



<p>そんな方に作ってほしいのがこの<strong>「スパイス弾けるさつまいものポテトサラダ」</strong>です。</p>



<p><strong>クミンシード</strong>と<strong>フェンネルシード</strong>がさつまいもの長すぎる余韻をさっぱりとさせてくれます。<br>特に<strong>フェンネルを噛みしめたときの、甘さとスッキリ感が混ざり合った感じは幸福感をもたらしてくれます。</strong></p>

<h2 class="wp-block-heading">フェンネル弾けるさつまいものポテトサラダの材料</h2>



<pre class="wp-block-verse">【材料(2〜3人前)】
・さつまいも・・・・・150g
・ゆで卵・・・・・・・2個
・クリームチーズ・・・15g

・マヨネーズ・・・大さじ2
・レモン汁・・・・小さじ1

〈ホールスパイス〉
・クミンシード・・・・・ひとつまみ(1g弱ほど)
・フェンネルシード・・・ひとつまみ(1g弱ほど)

〈仕上げにお好みで〉
・ブラックペッパー・・・適量
・フライドオニオン・・・適量</pre>



<h2 class="wp-block-heading"> フェンネル弾けるさつまいものポテトサラダの手順</h2>



<p>【手順】<br>1.さつまいもは2cmほどの厚みに切り、10分ほど水にさらす。</p>



<p>耐熱容器にさつまいもを入れ、ラップをふわりとかけて、600wで5分チンする。<br>さつまいもの食感を残さず、柔らかく仕上げる場合は、時間を追加する。</p>

<p>2.さつまいもをチンしている間に、〈ホールスパイス〉を乾煎りする。<br>弱火でフライパンを振りながら、3〜4分、香りが立つまで煎る。</p>

<p>3.さつまいもをフォークやおたまなど、潰しやすいもので潰す。今回は形が残るように荒く潰しました。<br>さつまいもが冷めないうちに、マヨネーズ、レモン汁を加えてよく混ぜる。</p>



<p>4.ゆで卵とクリームチーズを加えたら潰しながら混ぜる。<br>乾煎りした〈ホールスパイス〉を加え、さらに混ぜる。</p>
