<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、しょうがを多めに入れつつ、スパイスをほんの少しだけ入れて、キリッと締まった風味が食欲そそる、<strong>「トマトのちょっぴりスパイシー冷製スープ」</strong>のご紹介です。</p>



<p class="wp-block-paragraph">だし汁とトマトの旨みたっぷりスープを、スパイスたちで味を引き締めた、夏に食べたい爽やかスープです。</p>

<p class="wp-block-paragraph"><strong>夏でも温かいものは割と食べるほうの私</strong>ですら、<strong>最近はしんどくなってきた</strong>ので、冷製スープを作ってみることにしました。</p>



<p class="wp-block-paragraph">食欲も若干減退気味だったので、<strong>たっぷりのしょうが</strong>と、<strong>ほんのりパウダースパイス</strong>を仕込んで、<strong>食が進むような風味</strong>をつけました。</p>



<p class="wp-block-paragraph"><strong>だし汁の旨みと溶け合ったトマトの旨み</strong>に、<strong>シャクシャクのズッキーニと玉ねぎが楽しい食感。</strong>さらに<strong>ししとうの風味がアクセント</strong>となって、あっという間に食べ終えてしまいました。</p>

<p class="wp-block-paragraph">この冷製スープを一口運ぶと、<strong>旨みと共にグッとしょうがの刺激</strong>が来て、そのあと<strong>ほんのりパウダースパイスの風味</strong>が抜けていき、食欲そそります。</p>



<p class="wp-block-paragraph">しょうがはチューブのものでもよいのですが、やはり<strong>生のしょうが</strong>は風味が違います。<br>ぜひ土しょうがをお買い求めになって、<strong>おうちですりおろしてみて</strong>ください。</p>



<p class="wp-block-paragraph">パウダースパイスは、クミンが奥深さ、コリアンダーが爽やかさ、カイエンペッパーが辛みをそれぞれ担います。<br>スパイスのほかに、風味の強い食材をあまり入れていないので、少量でも十分効果を発揮します。<br>あくまでしょうがが主役。<strong>他はほんのり香らせる程度に使うのがポイント</strong>です。</p>



<p class="wp-block-paragraph"><span class="fz-14px">キリッとしょうがは効いているけど、スパイシーさはちょっぴり……</span><br><span class="fz-14px">「どっちやねん！」と自分でも思いますが、<strong>「スパイシー」</strong>にはなんだか<strong>「辛い」というイメージがくっついている</strong>気がしていて、<strong>決して辛いスープではない</strong>ということを表現するためにこういうタイトルになりました。</span></p>

　<span class="fz-14px">だしの素やコンソメキューブなどお好みで</span>
　<span class="fz-14px">塩分の入っただしの素やコンソメなどの場合は、それに含まれる塩分量の分、塩を引いてください</span>

・しょうが・・・10g(すりおろし)
・塩・・・・・・4g

〈パウダースパイス〉
・クミン・・・・・・・・1g(小さじ1/2弱)
・コリアンダー・・・・・1g(約小さじ1/2)
・カイエンペッパー・・・0.5g(約小さじ1/4)

<p class="wp-block-paragraph"><span class="fz-16px">・水・・・・・・500cc<br>・昆布・・・・・5g<br>・かつお節・・・5g</span></p>



<p class="wp-block-paragraph"><span class="fz-14px">水に昆布を30分以上浸けたあと、10分以上かけて弱火～弱めの中火で<strong>沸騰させないように</strong>煮出したら、昆布を取り出して沸騰させ、かつお節を入れて2～3分置き、ザルとペーパーを使って濾す。<br>余ったら味噌汁やカレーなどに使ってください。</span></p>

<h2 class="wp-block-heading"><span id="toc6">トマトのちょっぴりスパイシー冷製スープの手順</span></h2>



<p class="wp-block-paragraph"><strong>1.</strong>トマトはざく切りにし、ズッキーニと玉ねぎは0.5～1cmぐらいの角切りにする。<br>ししとうは斜め小口切りにし、しょうがはすりおろす。<br><strong>しょうがの皮はスプーンで剥くと簡単</strong>です。</p>



<p class="wp-block-paragraph"><strong>2.</strong>鍋にトマト～カイエンペッパーまでの材料を全て入れて中火にかける。<br>沸いてきたら火を弱め、<strong>玉ねぎに透明感</strong>が出るまで煮る。</p>

<p class="wp-block-paragraph"><strong>3.</strong>味見をして、塩が足りなければ補う。<br>その後、火を止めて、ボウルなどに入れる、もしくは鍋ごと氷水に当て、冷やす。<br>粗熱が取れたら、保存容器に入れて冷蔵庫で冷やす。</p>



<p class="wp-block-paragraph">このとき、保存容器、あるいは食べる器に入れて冷やしても。<br>トマト<strong>(酸性)</strong>が入っているので、<strong>ガラス</strong>かホーローの保存容器をおススメします。</p>

<p class="wp-block-paragraph"><strong>4.</strong>冷蔵庫から取り出して盛り付け、仕上げにブラックペッパーを振る。レモンを乗せるか、軽く絞って完成です。</p>

<h4 class="wp-block-heading"><span id="toc2">このレシピについて</span></h4>



<p class="wp-block-paragraph">お正月の料理でおせちと共に欠かせないお雑煮。<br>元日のお雑煮は、皆さんそれぞれの地域の、伝統的なお雑煮を召し上がっていただき、<strong>このカレー雑煮は2日から召し上がっていただきたいお雑煮です。</strong></p>



<p class="wp-block-paragraph">カレー粉の刺激的な香りは、穏やかなおせち料理の良いアクセントになること間違いなしです。</p>

<p class="wp-block-paragraph">・ベースのおだしは、カレー粉の香りに負けないよう、煮干しだしを使いましたが、ここは皆さんのご家庭の好みでよいと思います。何はともあれ、<strong>だしは必ず入れてください。</strong></p>



<p class="wp-block-paragraph">・<strong>豚肉は、常備しているような切り落とし肉なら何でもよい</strong>と思います。豚バラ肉のスライスがあれば、一番合うと思います。<br><strong>硬くならないように小麦粉をまぶしてから炒めます。</strong>これがとろみの素にもなるので、必ずまぶしてください。</p>



<p class="wp-block-paragraph">・カレー粉は、ただ溶かすと馴染みが悪いので、豚肉を油で炒めているところに馴染ませました。<strong>スパイスと油はセットです。</strong></p>



<p class="wp-block-paragraph">・醤油については、濃口醬油でも大丈夫ですが、淡口醬油のほうが、香りが上品に仕上がります。</p>



<p class="wp-block-paragraph">ほとんどカレーうどんの出汁みたいなレシピなのですが、<strong>餅からとろみが出るので、水溶き片栗粉は不要です。<br></strong>餅が溶けすぎないよう、ほどほどに、ゆっくり煮込んでください。</p>



<p class="wp-block-paragraph">ゆっくり煮込めば味の一体感が生まれます。餅におだしの効いたカレーつゆが絡みつき、絶品のお雑煮となりますよ！</p>

<p class="wp-block-paragraph">【手順】<br>1.〈煮干しだし〉を作る。水に煮干しと昆布を漬け、30分以上～一晩置く。<br>鍋に移して弱めの中火にかけ、沸騰しないようにじっくり10分間煮出したら濾しておく。</p>

<p class="wp-block-paragraph">2.豚肉に塩と小麦粉をまぶしたら、フライパンに油を熱し、中火で炒める。肉の色が変わり切る前にカレー粉をまぶし、<strong>弱火にして</strong>粉っぽさがなくなるまでよく馴染ませるように炒める。</p>

<p class="wp-block-paragraph">4.餅を入れて弱火でさらに煮込む。餅がトロトロにならないように煮込みすぎに注意しながら火を通す。</p>

<p class="wp-block-paragraph">豚肉にガラムマサラが香り、黒酢あんには五香粉が香る、<br>スパイスで贅沢感を演出した<strong>「五香粉が香る黒酢酢豚」</strong></p>



<p class="wp-block-paragraph">ピリッとしつつも爽やかな花椒がクセになる<strong>「白菜の花椒浅漬け」</strong></p>



<p class="wp-block-paragraph">ごま油×コリアンダーパウダーの意外な相性のよさで、<br>香ばしさを演出した<strong>「コリアンダー香る豆苗の卵スープ」</strong>です。</p>



<h4 class="wp-block-heading"><span id="toc5">定食のポイント</span></h4>



<p class="wp-block-paragraph">黒酢のコク深さと、<strong>スパイスが食欲をそそり、ご飯がもりもり進む黒酢酢豚</strong>には、箸休めの白菜の浅漬けを合わせて。<br>これまた<strong>花椒がアクセント</strong>になってどんどん食べ進めてしまいます。</p>



<p class="wp-block-paragraph">豆苗の卵スープには、ごま油で香りづけ。ここにコリアンダーパウダーが合わさると、<strong>不思議な香ばしさ</strong>が生まれます。</p>



<p class="wp-block-paragraph">酢豚は難しいイメージがあるかもしれませんが、肉と野菜を揚げて、最後にあんでまとめるだけなので、意外と簡単。</p>

<p class="wp-block-paragraph">黒酢あんに五香粉が香り、華やかな雰囲気の酢豚。<br><strong>ガラムマサラで漬けこんだ豚肉は、ふんわりとスパイシーで食欲をそそります。</strong><br>じっくり揚げて、モモ肉でも噛み切れるよう柔らかく仕上げましょう。</p>



<p class="wp-block-paragraph"><strong>黒酢あんにクミンシードを忍ばせるのがポイント。</strong></p>

〈豚肉の下準備〉
・豚モモブロック肉・・・200g
・塩・・・・・・・・・・1g
・砂糖・・・・・・・・・1g
・酒・・・・・・・・・・小さじ2
・ガラムマサラ・・・・・0.5g(約小さじ1/4)
・サラダ油・・・・・・・小さじ1

・片栗粉・・・大さじ1
・油・・・・・豚モモ肉が半分浸かる程度

〈野菜〉
・れんこん・・・100g(乱切り)
・玉ねぎ・・・・50g(2〜3cm角に切る)
・パプリカ・・・50g(2〜3cm角に切る)

・揚げ油・・・・・・大さじ1
・クミンシード・・・ひとつまみ(1〜2g程度)

〈黒酢あん〉
・黒酢・・・・大さじ3
・醤油・・・・大さじ1
・酒・・・・・大さじ1
・砂糖・・・・大さじ3
・水・・・・・50cc
・五香粉・・・小さじ1/2
・鶏ガラスープの素・・・小さじ1/2

〈水溶き片栗粉〉<span class="fz-16px">(早めに作っておく)</span>
・片栗粉・・・小さじ1と1/2
・水・・・・・50cc

〈仕上げのスパイス〉
・ブラックペッパー・・・5粒程度(ミルで挽く)</pre>



<p class="wp-block-paragraph">【手順】<br>1.豚モモブロック肉は格子状に切れ目を入れたあと、3cm角に切る。</p>



<p class="wp-block-paragraph">塩、砂糖、酒、ガラムマサラ、サラダ油を揉み込んで寝かせる。一晩寝かせるとしっかり味が染みます。</p>

<p class="wp-block-paragraph">2.豚肉に片栗粉をまぶしたら、フライパンに油を注ぎ、豚肉を隙間が空くように置いて、弱めの中火で熱する。</p>



<p class="wp-block-paragraph">片面がきつね色になるまでじっくり触らずに揚げる。</p>



<p class="wp-block-paragraph">ひっくり返してもう一面もきつね色になったら豚肉を取り出す。</p>

<p class="wp-block-paragraph">3.残った揚げ油でれんこんを中火で揚げる。透明感が出てきたら火が通った目安です。</p>



<p class="wp-block-paragraph">れんこんを取り出し、玉ねぎとパプリカも揚げ、玉ねぎが透き通ってきたら取り出す。</p>

<p class="wp-block-paragraph">4.〈黒酢あん〉の調味料を混ぜておく。<br>フライパンに揚げた油を大さじ1残し、中火で熱する。クミンシードを入れてシュワシュワと泡立ってきたら、火を弱め、〈黒酢あん〉の調味料を入れる。</p>



<p class="wp-block-paragraph">少し火を強め、砂糖が溶けて沸騰してきたら、また火を弱め、〈水溶き片栗粉〉を入れ、すぐさまかき混ぜる。火を強めて沸騰させ、最低でも1分以上加熱する。</p>

<p class="wp-block-paragraph">花椒を入れると、ピリッとしつつも、爽快感もある白菜の浅漬けに。<br><strong>花椒は少し香ばしめに煎っておくのがポイント</strong>です。</p>



<p class="wp-block-paragraph">花椒は食べられますが、ほんのり残るクセが気になる方は取り除いてもよいでしょう。</p>

<p class="wp-block-paragraph">【手順】<br>1.フライパンに花椒を入れ、弱めの中火で熱する。焦げないようにフライパンを振りながら、香りが立つまで乾煎りする。少し香ばしめに煎るのがおススメです。</p>

<p class="wp-block-paragraph">3.ジッパー付きの袋に入れて、空気を抜き、重しをしたら冷蔵庫に入れ、最低でも3時間以上漬ける。おススメは<strong>半日以上</strong>です。<br>漬ける容器は浅漬け専用の重し付きのものでも何でも構いません。</p>

<p class="wp-block-paragraph">ごま油とコリアンダーの香りの意外な相性のよさにびっくり。ほんのり香ばしさを感じられます。</p>

・溶き卵・・・1個分(好みで2個)
・豆苗・・・・1/2袋
・水・・・・・400cc
・醤油・・・・小さじ1/2
・ごま油・・・小さじ1
・鶏ガラスープの素・・・・・小さじ2と1/2
・コリアンダーパウダー・・・2g(小さじ1)</pre>



<p class="wp-block-paragraph">【手順】<br>1.小鍋に水と鶏ガラスープの素、醤油を入れ、温まったら、豆苗を入れ2〜3分煮る。</p>



<p class="wp-block-paragraph">2.ごま油とコリアンダーパウダーを入れ、沸騰させたら溶き卵を回し入れ、火を止めて卵が固まったら完成。</p>
