<p class="wp-block-paragraph"><strong>瑞々しい夏野菜と爽やかな香りのディル、そして酢のさっぱり感</strong>で、うだるような暑さの中でも、気持ちよく食欲が刺激されます。<br>ささみの他、刺身、肉や魚のステーキ、豆腐の上など、かけたい料理はあれこれ。<br><strong>よーく冷やした夏野菜ソースでさっぱりと夏を乗り切りましょう。</strong></p>

<p class="wp-block-paragraph"><strong>山形の「だし」</strong>が流行ったのはいつだったでしょうか。<br>子どもの頃、夏は白いご飯にたっぷりかけてかき込んでいたことを思い出します。</p>



<p class="wp-block-paragraph">そんな「だし」を参考にしつつ、刻んだ夏野菜にディルを合わせた、あらゆる料理にかけて活躍するソースを作ってみました。</p>

<p class="wp-block-paragraph">使ったのは夏野菜の三種の神器と勝手に思っている、<strong>ナス、きゅうり、トマト。</strong>この3つを夏は欠かさず野菜室に入れています。<br>そこに玉ねぎを刻んで加え、食感のアクセントに。</p>



<p class="wp-block-paragraph">水ナスのサラダからヒントを得て、<strong>ナスは生のまま</strong>使いました。<br><strong>塩もみしてキュッとしたナスは歯切れよく</strong>頂けます。<br><strong>瑞々しい夏野菜と酢で身体がシャキッと引き締まり</strong>、暑さに溶けそうな気持ちをピンと正してくれるような味わいとなりました。</p>



<p class="wp-block-paragraph">そして何といってもディルの風味の気持ちよさといったらありません。<br><strong>ディルがあるだけで、一気に美味さが格上げ</strong>されたような気分に。<br><strong>酢と合わさったディルの風味はやはり格別</strong>です。</p>



<p class="wp-block-paragraph">パパッと夏野菜を食べられるし、とりあえずこれをかけておけば料理の味付けに困らなくなります。<br><strong>冷蔵庫にこれがあると嬉しくなる、そんな一品。</strong></p>



<p class="wp-block-paragraph">ディルが手に入らないなら、ディルが効いたきゅうりのピクルスを少量刻んで混ぜてみて。雰囲気は出るかと思います。</p>

・トマト・・・・100～120g<span class="fz-14px">(やや小さめのもの1個)</span>
・玉ねぎ・・・・50g
・塩・・・・・・計4g

・酢・・・・大さじ4
・砂糖・・・大さじ1
・オリーブオイル・・・大さじ3

・ブラックペッパー・・・3～4振り
・ディル・・・・・・・・3～5gを目安にお好きなだけ</pre>



<h2 class="wp-block-heading"><span id="toc3">ディル香るコロコロ夏野菜ソースの手順</span></h2>



<p class="wp-block-paragraph"><strong>1.</strong>きゅうりは0.5～1cmの角切りにする。<br>ナスはきゅうりより一回り以上大きめの角切りにする。<br>トマトは1cmぐらいの角切り、玉ねぎは0.5cmぐらいの粗めにみじん切りする。</p>



<p class="wp-block-paragraph"><strong>2.</strong>きゅうりとナスに塩2gを振ってしばらく置き、水気が出てきたら、ナスを壊さない程度に絞る。<br>玉ねぎには塩をひとつまみ(分量外)振ってしばらく置き、水気が出てきたら絞って水にさらす。</p>

<p class="wp-block-paragraph"><strong>3.</strong>きゅうり、ナス、トマト、水気を切った玉ねぎを大きめのボウルに入れ、<br>残りの塩、酢、砂糖を入れてよく混ぜる。<br>オリーブオイルを入れてさらに混ぜたら、ブラックペッパーを振り、ディルをちぎって入れたら、保存容器に入れて冷蔵庫で冷やして完成。<br>ナスの皮の色が変わってくるので、2～3日のうちに食べきるのをおススメします。</p>

<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、<strong>ミニトマトを醤油不使用の三杯酢に漬けたディル風味のピクルス</strong>をご紹介します。</p>



<p class="wp-block-paragraph"><strong>キュッと締まったミニトマト</strong>を嚙みしめると、<strong>フルーツかと見紛う</strong>ほどの、幸せな酸味と甘みがプチッと口いっぱいに広がります。</p>



<p class="wp-block-paragraph"><strong>カレーの副菜</strong>としてさっぱり感を楽しむほか、<strong>ちょっと塩気を効かせて、暑い時季の食欲に火をつける前菜</strong>として食べるのもおススメです。</p>



<h3 class="wp-block-heading"><span id="toc2">このレシピについて</span></h3>



<p class="wp-block-paragraph">だんだん暑くなってきて、トマトがいっぱい出回るようになり、トマトスキーな私としては嬉しい季節になりました。<br>とはいえ、あんまり「ミニトマト」は食べてないな……と思っていると、<strong>カレーにコロンと添えるピクルス</strong>にすれば楽しく食べられそうだなということで、早速作ってみました。</p>

<p class="wp-block-paragraph">ピクルスにしたミニトマトからは水気が出て、キュッと締まった<strong>ハリのある食感。</strong><br>それを噛みしめると、<strong>「ぶどうでも食べたか！？」と驚くフルーティさ。</strong></p>



<p class="wp-block-paragraph">単にピクルスとして食べるほか、<strong>カレーに混ぜてしまって味変アイテム的に使うのも◎</strong><br>塩トマト<span class="fz-14px">(万能調味料のほう)</span>的な感じで使ってみてください。</p>



<p class="wp-block-paragraph">ディルの風味が甘酢に絡んでフルーティさを後押ししてくれます。<br>今回使ったのは、<strong>醤油が入らない三杯酢のレシピだから、ディルの風味もすんなり馴染みます。</strong></p>



<p class="wp-block-paragraph">プレーンな三杯酢だから、ディルのほかにも、コリアンダーや粗く砕いたブラックペッパーなどを入れて、色んな風味にアレンジしてみてください。</p>

<p class="wp-block-paragraph">このうち、色んなスパイスを入れても馴染むであろう、醬油を使わない「即席」のレシピで作りました。<br>また、<strong><em>「味の素を少々加えることはもちろんである。」</em></strong>(！)と書かれていた点もリスペクトし、加えてみたところ、味の輪郭がはっきりと立ちました。好みではありますが、ごく少々入れてみてください。</p>



<p class="wp-block-paragraph">ただ、この味付けの比率では、現代ではちょっとしょっぱいかも？<br>ということで、レシピにおける塩の量は10gを基準としました。<br>しかし、上のレシピの比率通りの12.5gでも美味しい(汗をかいた日は特に)ので、<strong>体調や、食べる時期の気候に合わせて味を調整してください。</strong></p>

<p class="wp-block-paragraph"><strong>1.</strong>鍋に〈三杯酢〉の酢～味の素までの材料を入れて煮立てたら冷ます。<br>塩は食べる時期の気候に合わせ、増減してください(例：暑くてよく汗をかくときは12.5g入れる)。</p>



<p class="wp-block-paragraph">また、味の素は元のレシピをリスペクトした上で入れてみましたが、あると味わいの輪郭がはっきりするように思います。<br>もし、お家になければ入れなくてもよいです。</p>

<p class="wp-block-paragraph"><strong>2.</strong>鍋に湯をたっぷり沸かし、ヘタを取って洗ったミニトマトを入れたら10秒ぐらいで引き揚げ、すぐに冷水にさらす。</p>



<p class="wp-block-paragraph">ミニトマトが冷えたら、ヘタのついていた部分をきっかけに皮を剥く。<br>見た感じ、剥けなさそうに見えますが、一度きっかけをつくってしまえば、意外とツルッと剥けます。</p>

<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、一口サイズでパクパク食べられる<strong>「鶏むね肉のチキンカツ」</strong>と、それをアレンジして作る<strong>トマトソースの「スパカツ」</strong>のご紹介です。</p>



<p class="wp-block-paragraph">鶏むね肉をブライン液に浸すことで、<strong>冷めても柔らかなチキンカツは、もはやふわふわ食感。</strong><br><strong>一口サイズ</strong>の可愛らしさもあって、<strong>パクパクと何個でも食べられます。</strong></p>

<p class="wp-block-paragraph">とはいっても、鶏むね肉1枚でもたくさん揚がるので、<strong>余った分は「スパカツ」風にアレンジ。</strong><br>トマトソースに絡んだチキンカツの、なんともリッチな味わいは得も言われぬ美味しさ。<strong>これのためにチキンカツを揚げてもいいぐらいです。</strong></p>



<p class="wp-block-paragraph">今回は、そんな「チキンカツ」と、「スパカツ」のアレンジレシピの2本立てでお送りします。</p>



<h3 class="wp-block-heading"><span id="toc2">このレシピについて</span></h3>



<p class="wp-block-paragraph">鶏むね肉をジューシーに料理するには欠かせない〈ブライン液〉。今回も大活躍です。</p>



<p class="wp-block-paragraph">そのおかげで、<strong>揚げたては「柔らか」を通り越して、もはや「ふわふわ」な食感。</strong><br>ブライン液で下味がついているから、味が簡単に決まります(というか、ブライン液の下味だけでOK)。</p>



<p class="wp-block-paragraph">一口サイズにすることで<strong>揚げ時間を短縮</strong>でき、<strong>パサつき防止</strong>にもなります。<br>そのサイズ感もさることながら、<strong>冷めても柔らか美味しいから、お弁当にもピッタリ</strong>です。</p>

<p class="wp-block-paragraph">そのまま食べても美味しいですが、<strong>ディルマヨネーズ</strong>が抜群に合います。<br>コクがありつつもディルの風味とレモン汁で後味さっぱり。何個でも食べたくなります。</p>



<p class="wp-block-paragraph">とはいっても胃袋は有限ですから、チキンカツが余ることも。<br>そんな翌日には、<strong>トマトソースの「スパカツ」にアレンジ</strong>してみるのはどうでしょう。<br>釧路市の郷土料理である<strong>「スパカツ」を参考</strong>にしたレシピです。</p>

<p class="wp-block-paragraph">本場ではミートソースですが、市販を使わない限り用意するのは大変……。<br>ということで、<strong>サッと作れるトマトソース</strong>に絡めました。<br><strong>トマトピューレ</strong>を使えば、短時間で手をかけたような味になります。</p>



<p class="wp-block-paragraph"><strong>柔らか〜いカツに、にんにくのパンチと濃厚なトマトの旨み……もう堪らん。</strong><br><strong>オレガノ</strong>の風味も食欲そそります。<br>トマトソースを吸った衣まで美味しく、さながら、<strong>パスタ界のカツ丼</strong>の如し。</p>

<h2 class="wp-block-heading"><span id="toc4">一口サイズの鶏むねチキンカツの手順</span></h2>



<p class="wp-block-paragraph"><strong>0.(前日準備)</strong><br>鶏むね肉は縦半分に切ったあと、それぞれ<strong>繊維を断つように厚み1～1.5cmの斜めそぎ切り</strong>にする。</p>



<p class="wp-block-paragraph">〈ブライン液〉の材料を全て混ぜたものに鶏むね肉を浸け、冷蔵庫に入れて一晩置く。<br>5%のブライン液だと、私は塩辛く感じますし、どうせあとからソースをかけたりつけたりするので、3%がおススメです。</p>

<p class="wp-block-paragraph"><strong>1.</strong>鶏むね肉をザルに上げ、水気を切る。<br>パン粉を食パンから作る場合は、フードプロセッサーなどで作る。</p>

<p class="wp-block-paragraph"><strong>2.</strong>鶏むね肉全体に小麦粉をまぶし、溶き卵にくぐらせたらパン粉を付け、170℃の油で2〜3分揚げる。<br>衣が美味しそうに色づいたら引き上げる。</p>

<p class="wp-block-paragraph"><strong>〈ディルマヨネーズ〉</strong><br>マヨネーズとレモン汁をよく混ぜたら、ディルをちぎり入れ、サッと混ぜたら完成。<br>ディルが手に入らない場合は、ディルが香る刻みピクルスなどでも。<br><strong>〈ケチャップソース〉</strong><br>とんかつソースとケチャップを1:1の比率で入れて混ぜたら完成。</p>

<p class="wp-block-paragraph"><strong>1.</strong>フライパンにオリーブオイルとにんにくを入れ、弱めの中火で香りが立つまでじっくり熱する。</p>

<p class="wp-block-paragraph"><strong>2.</strong>コンロが2つある場合は隣で〈ゆで汁〉の材料を沸かし、スパゲッティを茹で始める。</p>



<p class="wp-block-paragraph"><strong>3.</strong>〈トマトソース〉のフライパンに、トマト、トマトピューレ、塩、オレガノを入れ、トマトの角が取れてくるまでクツクツ煮る。<br>トマトピューレがない場合は、味がさらに濃くなりますが、ケチャップを使っても。<br>その場合は塩を半分にし、トマトを増やしてください。</p>

<p class="wp-block-paragraph"><strong>4.</strong>〈トマトソース〉が煮詰まってきたら、パスタの茹で汁を大さじ2～3ほど入れて伸ばす。</p>



<p class="wp-block-paragraph">チキンカツを入れて、ソースと衣が馴染むまでサッと煮る。</p>

<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、鶏手羽先やネギ、トマトといった<strong>具材の旨みをギュッと詰め込んだスープに、ディルが爽やかな香りを添える一品</strong>をご紹介します。</p>



<p class="wp-block-paragraph">鶏手羽先とネギはしっかり焼き付けた上で、白ワインで焼き目を溶かせば、<strong>コンソメいらずのしっかりした旨みがスープ全体に広がります。</strong><br>さらにトマトと豆の旨みを加えれば、<strong>具材ゴロっと、旨みたっぷりのおかずスープ</strong>といった趣です。</p>



<p class="wp-block-paragraph"><strong>ディル</strong>をちぎって入れれば爽やかな香りで満たされ、幸せなひとときを過ごせます。</p>



<h3 class="wp-block-heading"><span id="toc2">このレシピについて</span></h3>



<p class="wp-block-paragraph">農協の直売所でディルが並んでいたのを見て、思わず購入。<br>好きな香りなのに、なかなかお目にかかれないハーブだったから、嬉しくてたまりませんでした。</p>



<p class="wp-block-paragraph">そんなディルは魚やピクルスに合わせるものいいですが、どうやらスープにするのも美味しいそうなので作ってみることにしました。</p>

<p class="wp-block-paragraph"><strong>トロットロのネギに、舌の上でほぐれていく豆の旨み</strong>がじんわり染みていき、<strong>スプーンでもほぐせる鶏手羽先を絡めつつ食べると最高。</strong><br>豆からも旨味が出るし、ボリュームも出るから、<strong>満足感たっぷりのおかずスープ</strong>といった一品です。</p>



<p class="wp-block-paragraph">鶏手羽先、ネギ、トマトといった<strong>具材の旨みを凝縮するから、コンソメやブイヨンいらず。味付けも塩だけでOKです。</strong></p>



<p class="wp-block-paragraph"><strong>ディル</strong>をちぎって入れれば、爽やかに香って食欲そそります。<br>トマトの酸味と合うのもさることながら、特に炒めに使ったオリーブオイルとの香りの相性がよく、<strong>食べたあとでも華やかな香りの余韻が続きます。</strong></p>



<p class="wp-block-paragraph"><strong>オイルの旨みも大事なファクター</strong>なので、あまりケチらず、<strong>むしろ仕上げに追いオリーブするぐらいの勢い</strong>で使いましょう。<br>ディルをオリーブオイルに浸けたものをあとからかけるのもおススメです。</p>



<h3 class="wp-block-heading"><span id="toc3">ディル香る鶏手羽先と豆のトマトスープのポイント</span></h3>



<h4 class="wp-block-heading"><span id="toc4">パンもいいけどライスもね</span></h4>



<p class="wp-block-paragraph">こういう洋食っぽいスープなら、やはり合わせるのはパン……と言いたいところですが、根っからのご飯党の私はライスでいただきます。<br>白米でもいいのですが、せっかくなのでライスに一工夫加え、<strong>にんにくを効かせた「にんにくライス」</strong>を炊きました<span class="fz-14px">(レシピはスープの後に記載)</span>。</p>



<p class="wp-block-paragraph">コンソメなどのスープの素を使っておらず、決して洋に振り切ってはいないからライスでも美味しくいただけます。<br><strong>〆にスープご飯として食べるのが抜群に旨い！</strong></p>

<p class="wp-block-paragraph">今回は手羽先を使いましたが、<strong>先っちょの部分を食べようとすると、どうしても手がベタベタになってしまう</strong>ので、先っちょがない<strong>手羽中、あるいは手羽元でもOK。</strong><br>ただし、どの手羽でも、骨と肉の間に切れ目を入れておくのはお忘れなく。</p>

<h2 class="wp-block-heading"><span id="toc7">ディル香る鶏手羽先と豆のトマトスープの手順</span></h2>



<p class="wp-block-paragraph"><strong>1.</strong>鶏手羽先の骨と肉の間に、包丁で切れ目を一筋を入れておく。<br>これをしておけばスプーンでもほぐれるようになります。</p>

<p class="wp-block-paragraph">白ネギは3～4cmの長さに切る。にんにくは包丁の腹で潰す。<br>ミックスビーンズは水気があれば切っておく。</p>



<p class="wp-block-paragraph"><strong>2.</strong>鍋に油と白ネギ、にんにくを入れて中火にかける。<br>ネギ、にんにくの片面に焼き目がついたらひっくり返す。</p>

<p class="wp-block-paragraph">ネギの裏面にも焼き目がついたら、鶏手羽先を皮を下にして入れて焼き付ける。<br>この時、塩を3g振る。<br>ネギ、にんにくは鶏手羽先の上に逃がしておきましょう。</p>



<p class="wp-block-paragraph">鶏手羽先の皮に香ばしい焼き目がついたらひっくり返し、半分に折ったローリエ、白ワインを入れて煮立たせる。</p>

<p class="wp-block-paragraph"><strong>3.</strong>白ワインのアルコール臭が飛んできたら、トマト、ミックスビーンズ、水、残りの塩2gを入れて沸かす。</p>



<p class="wp-block-paragraph">フタをして弱火にし、10分煮たらフタ開けて味見する。<br>味が足りなければ塩を補い、味が濃ければ水を補う。</p>

・水・・・・・・360ccぐらい(洗った米と同量)
・塩・・・・・・2.5～3g
・にんにく・・・2片</pre>



<p class="wp-block-paragraph"><strong>1.</strong>米は洗って夏場は30分、冬場は1時間浸水する。</p>



<p class="wp-block-paragraph"><strong>2.</strong>米の水気を切り、重さを量る。<br>鍋に洗った米、洗った米と同量の水(今回は約360cc)、塩、包丁の腹で潰したにんにくを入れて中火にかける。</p>

<p class="wp-block-paragraph"><strong>3.</strong>ふつふつと沸いてきたらよくかき混ぜ、密閉できるフタをして弱火で10分炊いたら10分蒸らす。<br>ストウブ等の鋳物ホーロー鍋ならそのままフタをしてOK。<br>その他の鍋なら、1度クシャっとして広げたアルミホイルを米の上に載せて炊いてください。</p>
