<p>こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、新じゃがの時期ということで、皮付きのまま鶏肉と煮るレシピ、<strong>「クミンとにんにくが効いた鶏じゃが煮っころがし」</strong>をご紹介します。</p>



<p>ホクホクの新じゃがに、クミンとにんにくが効いた煮汁がトロリと絡み、ご飯をかっさらう煮物になりました。<br><strong>暑い時期にこそ食べたい、パンチのある一品</strong>です。</p>

<p><strong>新じゃが</strong>とくれば、<strong>やっぱり皮付きのまま</strong>料理したいところ。<br>皮付きのまま揚げてみたり、蒸してハフハフ食べたり……それもいいけど、今回は煮物です。</p>



<p>前からずっとやりたかった新じゃがの煮っころがしに挑戦しました。</p>



<p>よく洗って皮付きのままザクザクと切り、じっくりと煮ていきます。<br>そして最後に醤油を煮絡めたら、それはもう<strong>魅惑の茶色。</strong></p>



<p>クミンシードとにんにくが効いているので、<strong>暑い時期でも食欲をそそります。</strong><br>ちょっと食欲があるという日には、<strong>白ごはんを炊いて、一緒に食べればたちまち元気</strong>になります。</p>

<p>新じゃがいもの時期なら、よく洗って皮付きのまま煮るのがおススメ。<br>パツンと弾ける皮の食感と風味が私はとても好きです。<br><br>大きめにザクっと切って、<strong>煮汁が染みたところ</strong>と、<strong>中のホク甘のところ</strong>とのコントラストを楽しんでください。</p>

<p>ある程度長く煮たからか、<strong>クミンシードの香りが煮汁全体にふんわり</strong>広がっている感じ。でも、<strong>ふとしたとき、後味に抜ける香り</strong>があるとちょっと嬉しい。</p>



<p>クミンの香りに加え、<strong>にんにくのコクと玉ねぎ</strong>、さらに<strong>じゃがいもの表面</strong>が<strong>トロリと溶けた煮汁</strong>は、まさにご飯泥棒。</p>



<p>ホロホロ鶏肉とホクホクじゃがいもによく絡んで、箸が止まりませんでした。</p>

<h2 class="wp-block-heading">鶏じゃが煮っころがしの手順</h2>



<p>【手順】<br><strong>0.(前日準備)</strong><br>鶏もも肉1枚をだいたい8つぐらいに切り分けたら、〈ブライン液〉の材料を全て混ぜたボウルに一晩～浸ける。<br>ブライン液に浸けておくことで、煮ても鶏肉がホロホロ柔らかになります。</p>

<p><strong>1.</strong>じゃがいもの準備をする。<br><strong>新じゃが</strong>で、<strong>皮付きのまま使う</strong>場合は、<strong>よく皮を洗い、芽があれば取り除く。</strong><br>新じゃがの芽は分かりにくいので、<strong>よく手で触って確かめて</strong>ください。</p>



<p>普通のじゃがいも(メークイン推奨)は、皮を剥き、芽を取り除いたら洗っておく。</p>



<p>小さいものなら2つ、中くらいなら3つ、大きめのものなら4つぐらいに<strong>ざっくり切り</strong>、大き目のボウルに入れてラップをかけ、皮付きの場合は500wのレンジで10分ほどチンする。</p>



<p>皮を剥いた場合は5分にする。あるいはチンせずに煮る(それでもおそらく煮えます)。</p>

<p><strong>2.</strong>鶏もも肉はザルに上げ、〈ブライン液〉を捨てておく。<br>フライパンに油を入れて弱めの中火にかけ、<strong>にんにくを焦がさないように</strong>じっくり加熱する。<br>にんにくの良い香りが立ってきたら、クミンシードをふたつまみほど入れ、シュワシュワと泡が出て、香りが立ってくるまで30秒ほど熱する。</p>

<p><strong>3.</strong>レンジでチンしたじゃがいもをフライパンに入れて、中火にして炒める。<br>このとき、<strong>ボウルの水分も一緒に入れると跳ねるので注意！</strong><br>じゃがいもの表面に油が回り、透明感が出てきたら玉ねぎと鶏もも肉を入れて炒める。</p>

<p><strong>4.</strong>鶏もも肉の表面の色が変わってきたら、水と酒を注ぐ。<br>煮立ってきたら砂糖を入れ、<strong>落とし蓋</strong>をし、フツフツと<strong>沸いた状態を維持するように火加減</strong>をして8分煮る。</p>

<p><strong>5.</strong>醤油<strong>大さじ2</strong>を入れ、落とし蓋をしたまま15分煮る。<br>15分煮たら落とし蓋を取り、<strong>じゃがいもが煮えているかを確認する。</strong></p>



<p><strong>煮えていたら</strong>醤油<strong>大さじ1</strong>を入れて、水分が残っていれば火を強めて煮絡めたら完成！<br>熱いうちに食べるのもよいですが、少し冷めて味がなじんだものも美味しいです。</p>
