<p class="wp-block-paragraph">「ターメリックエビピラフ」は、<strong>コンソメでターメリックライスを炊いたあと、炒めた具材と合わせます。</strong>こうすれば<strong>パラパラしつつも、しっとりとしたピラフ</strong>に。<br><strong>ターメリックで色づいたライスは鮮やか</strong>で、ピーマンやにんじん、エビと一緒に色とりどりの目にもおいしいピラフです。</p>



<p class="wp-block-paragraph">秋はきのこの季節でもあります。「焼ききのこと水菜のサラダ」は、<strong>塩と油で旨みを引き出したきのこ</strong>を、さっぱりしつつもスパイシーな<strong>コリアンダードレッシングですっきり</strong>いただきましょう。</p>

<p class="wp-block-paragraph">色とりどりのエビピラフは、<strong>たくさん食べられるように、塩味控えめ</strong>で。お好みで塩を1gを足してください。<br>輸入業者のターメリックは色がしっかり出るのですが、<strong>市販のターメリックは少し色が薄い</strong>です。お使いのターメリックに合わせて、量を加減してください。</p>

〈ターメリックライス〉
・米・・・・・・2合
・水・・・・・・350cc
・にんじん・・・100g(0.5cm角切り)
・コンソメキューブ・・・1個
・ターメリック・・・・・1g(小さじ1/4)
　市販のものは色が薄いので、倍入れても。

・オリーブオイル・・・・大さじ1
・マスタードシード・・・1g
・むきエビ・・・・・・・100g
・ピーマン・・・・・・・1個(40〜50g)
・赤パプリカ・・・・・・ピーマンと同量
・バター・・・・・・・・10g
・塩・・・・・・・・・・2g</pre>



<p class="wp-block-paragraph">【手順】</p>



<p class="wp-block-paragraph">1.〈ターメリックライス〉を炊く。<br>密閉できるフタ付きの鍋に、洗って30分ほど浸水した米とにんじん、水、コンソメキューブ、ターメリックを入れて中火にかける。<br>沸騰してきたらよくかき混ぜ、密閉できるフタをして弱火で10分炊く。その後火を止めて10分蒸らす。</p>

<p class="wp-block-paragraph">2.〈ターメリックライス〉を炊いている間に、ピーマンと赤パプリカは0.5cm角に切る。<br>フライパンにオリーブオイルとマスタードシードを入れ、中火で熱する。弾けてきたらフタをして音が止むまで待つ。<br>音が止んだら、バターを溶かす。むきエビを入れ、片面を焼く。エビの片面の色が変わったらエビをひっくり返す。ピーマン、赤パプリカを入れ、香りが立つまで炒める。</p>

<p class="wp-block-paragraph">3.〈ターメリックライス〉をフライパンに入れ、ヘラなどでライスをほぐしながら、よく混ぜ合わせる。油が全体によく馴染み、ライスがパラパラとほぐれたら、塩を入れて混ぜれば完成！少し薄めに味をつけるのがポイントです。</p>

<p class="wp-block-paragraph"><strong>きのこは塩と油で食べるのが一番おいしい</strong>気がしています。旨みたっぷりのまいたけがおすすめ。他にはしめじや生しいたけ、エリンギでも。<br>塩を効かせたきのこで水菜がどんどん進み、コリアンダードレッシングがキリリと締めてくれます。</p>

・まいたけ・・・・・・1株130gほど

・赤パプリカ・・・・・ピラフの余り(30～50gほど)
・オリーブオイル・・・小さじ2
・水菜・・・・・・・・100g

〈ドレッシング〉
・コリアンダーパウダー・・・1g(小さじ1/2)
・オリーブオイル・・・・・・小さじ2
・酢・・・・小さじ2
・砂糖・・・小さじ1
・塩・・・・1g

・ブラックペッパー・・・10粒(0.5g程度)</pre>



<p class="wp-block-paragraph">【手順】<br>1.まいたけは食べやすいサイズに割く。フライパンにオリーブオイルを熱し、中火でまいたけを焼く。塩を振って味をつけておく。</p>

<p class="wp-block-paragraph">2.途中ひっくり返し、まいたけの両面が焼けたら取り出す。油が少なければ少し補い、赤パプリカのくし切りを焼き、これも取り出しておく。</p>



<p class="wp-block-paragraph">3.<strong>水菜は根元の土をよく落とし</strong>、2cmほどの食べやすい大きさに切る。</p>



<p class="wp-block-paragraph">4.〈ドレッシング〉の材料をよく混ぜる。油と酢が乳化するようによくかき混ぜる。</p>



<p class="wp-block-paragraph">5.皿に水菜を広げ、焼いたまいたけと赤パプリカを乗せ、〈ドレッシング〉をかければ完成！</p>

<p class="wp-block-paragraph">ぽかぽかと温まるだけでなく、しっかりとスパイスが効いたパンチのある味わいです。</p>



<p class="wp-block-paragraph">辛いので、苦手な方はカイエンペッパーをパプリカ(スパイス)に置き換えてください。</p>

<p class="wp-block-paragraph">【手順】<br>1.フライパンにオリーブオイルを中火で熱し、クミンシードを入れて30秒ほど熱する。クミンから泡が立ってきたらにんにくを入れ、香りが立つまで炒める。</p>

<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<strong>今回はホールスパイスを多めに使い、煮込み時間も短くして、スパイスのフレッシュな香りを楽しむチキンカレー</strong>をご紹介します。</p>



<p class="wp-block-paragraph">チキンカレーのチキンは煮込んで一体感があるものが好きなのですが、同じ味ばかりを食べたいわけではない自分としては、煮込み時間短めで、鶏肉の味がしっかり残ったカレーも食べたい気分のときもあります。</p>



<h3 class="wp-block-heading"><span id="toc2">スパイス薫るチキンカレーのポイント</span></h3>



<p class="wp-block-paragraph">このチキンカレーは、鮮烈なホールスパイス使いの南インドのカレーをベースに、サッと煮込んで鶏もも肉の旨みと豊かなスパイスの香りを楽しみます。<strong>鶏もも肉の美味しさが大事なので、ぜひとも【手順】で紹介する〈ブライン液〉に漬けていただきたいです。</strong></p>



<p class="wp-block-paragraph"><strong>スパイスのキー</strong>になるのは<strong>カルダモン</strong>。ちょっと高いスパイスですが、入れれば「スパイスの女王」たる鮮烈な香りが立ちます。少量でも十分に効果を発揮するので、結局コスパも悪いわけではないです。</p>

<h2 class="wp-block-heading"><span id="toc4">スパイス薫るチキンカレーの手順</span></h2>



<p class="wp-block-paragraph">【手順】<br>1.鶏もも肉を8つに切り、〈ブライン液〉に漬け、一晩(6時間〜)置く。調理開始前に水気を切っておく。</p>



<pre class="wp-block-verse"><strong>point!</strong> 鶏もも肉に下味がつくほか、ジューシーかつ柔らかく仕上がります。<br><span class="fz-16px">ネット上では5%のブライン液が多いですが、カレーの場合かなりしょっぱくなってしまうので、3%としています。</span></pre>

<p class="wp-block-paragraph">2.フライパンに油とマスタードシードを入れ、中火で熱する。パチパチと弾けてきたらフタをして音が止むまで待つ。音が止んだらカルダモンとパクチーの茎と根を刻んだものを入れる。香りが立ったら、クミンシードを入れ、シュワシュワと泡を立てるまで熱する。</p>

<p class="wp-block-paragraph">3.強めの中火にし、玉ねぎと塩を入れ、フライパンに広げたら、2〜3分放置する。玉ねぎの端が焦げ始めたら軽く混ぜ、差し水を入れる。焦げた部分を溶かし広げるように炒め、玉ねぎをヘラでつぶす。水分が飛び、また玉ねぎが色づき始めたら〈GGペースト〉を入れて、水分を飛ばしながら、にんにくとしょうがの香りが立ってくるまでしっかり炒める。</p>

<p class="wp-block-paragraph">4.青唐辛子を入れ、香りが立ってきたら、鶏もも肉を入れて、表面の色が白くなるまで炒める。弱火にして〈パウダースパイス〉とココナッツパウダーを入れ、粉っぽさがなくなるまでしっかり混ぜる。</p>

<p class="wp-block-paragraph">5.中火にして水を入れて沸騰させ、2分ほど煮たら、カットトマト缶を入れて、弱めの中火でフタをせずに5分煮込む。仕上げにガラムマサラを振ったら完成！</p>

<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。今回はフライパンで10分、<strong>すぐにできて、すぐおいしい、本格的な味わいの「南インド風サバ缶カレー」</strong>をご紹介します。</p>



<p class="wp-block-paragraph">南インドカレーはココナッツミルクが入ることが多く、<strong>サラリとしつつも、コクのある味わいが特徴です。ココナッツミルクが入るだけで、一気に本格カレーに！</strong></p>



<p class="wp-block-paragraph"><strong>今回は玉ねぎを焦がす必要がなく、すでに調理済みのサバ缶を使うので失敗知らずのカレーに。</strong>タマリンドの酸味は梅干しで代用します。<strong>梅干しは酸味だけでなく、コクと甘みも足すことができるので、スパイスカレーにおすすめの食材です。</strong></p>



<p class="wp-block-paragraph">サバ缶はちょっといいものを使うと、身に脂が乗ってふっくらしていて美味しいですよ。</p>

・玉ねぎ・・・・・・・・100g(繊維と逆方向に0.5cm薄切り)

・しょうが・・・・・・・5g(みじん切り)
・トマト・・・・・・・・100g(ざく切り)
・青唐辛子・・・・・・・15g(斜め切り)

<h2 class="wp-block-heading"><span id="toc4">南インド風サバ缶カレーの手順</span></h2>



<p class="wp-block-paragraph">【手順】<br>1.フライパンに油とマスタードシードを入れ、弱めの中火〜中火で熱する。パチパチと跳ねてきたらフタをして、音が止むまで待つ。音が止んだら、鷹の爪を入れて、色が変わるまで熱する。</p>



<p class="wp-block-paragraph">2.強めの中火にし、玉ねぎと塩を入れ、透明感が出てきたら、にんにく、しょうが、青唐辛子を入れ、1分ほど炒め香りを出す。</p>

<p class="wp-block-paragraph">3.トマトを入れ、軽くつぶしながら水分を飛ばしていく。ヘラですくっても水分が垂れてこなくなったら、弱火にして〈パウダースパイス〉と梅干しを入れ、粉っぽさがなくなるまでしっかり混ぜる。</p>

<p class="wp-block-paragraph">4.サバ缶(汁も全部！)とココナッツミルクを入れ、とろみが出てくるまで煮込んだら完成！とろみがキツいと思ったら、水を100cc程度入れて伸ばしてください。</p>

<p class="wp-block-paragraph"><strong>本当にあっという間にできるのに、こんな本格感のある味わいでいいの？</strong>とびっくりします。サバ缶のほかには、イワシ缶やツナ缶も合うと思います。</p>



<p class="wp-block-paragraph"><strong>サバ缶はちょっといいもの</strong>にすると、身がふっくらして美味しいです。<strong>パサパサのサバ缶だと、味はよくても口の中がモソモソして悲しくなります(一敗)。</strong></p>
