<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。今回は春に食べたい菜の花のカレー、「菜の花と豚バラのマスタードカレー」のレシピです。</p>



<p class="wp-block-paragraph">菜の花のほろ苦さと豚バラの脂がもたらす甘みを、粒マスタードを加えた酸味のあるカレーがまとめ上げます。</p>

<p class="wp-block-paragraph">私がインスタグラムに初めて投稿したレシピとして個人的に思い入れのあるレシピ。<br>2年経ってカレーの嗜好が変わったこともあって、当時とは違う作り方になりましたが、ここでご紹介したいと思います。</p>



<p class="wp-block-paragraph">菜の花のほろ苦さを、豚バラ肉の甘みが包み、さらにマスタードを加えて煮込んだカレーの酸味がまとめる、<strong>ちょっとオトナの味わい</strong>です。</p>



<p class="wp-block-paragraph">これまで菜の花は塩ゆでしてから加えていましたが、今年は<strong>焦げ目がつくまで焼いてみる</strong>ことに。<br><strong>焦げた香味が加わって、より奥行きのある味になりました。</strong></p>

<p class="wp-block-paragraph">菜の花は軽く焦がすぐらいまでじっくり焼くことで、苦味に香ばしさが加わって美味しくなります。それによって甘みも引き立つのでおススメの方法。</p>



<p class="wp-block-paragraph">煮込んでしまうと色が変わってしまうので、くれぐれもカレーに入れるときは最後に。</p>

<p class="wp-block-paragraph">皆さん、今一度、豚バラ肉を眺めてみてください。<strong>ほとんど脂です。</strong></p>



<p class="wp-block-paragraph">その性質上、<strong>豚バラ肉を食べているときは美味しい</strong>のですが、<strong>お肉から溶け出す旨みは少ない</strong>ので、グレイビーは今一つ味が足りないということが起こりがち。</p>



<p class="wp-block-paragraph">そんなときには、思い切って<strong>砂糖</strong>を入れてみましょう。<br><strong>味のバランスが整い、物足りなさを感じにくくなります。</strong></p>

<p class="wp-block-paragraph"><strong>1.</strong>豚バラブロック肉は一口大に切り、塩をまぶして小麦粉を振るっておく。フライパンに油を熱し、脂の部分から焼き、軽く焼き目がつくまで焼いたら取り出しておく。</p>

<p class="wp-block-paragraph"><strong>2.</strong>菜の花は<strong>茎の根元近い部分の表面をピーラーで剥き、筋を取っておく。</strong>上のほうまで筋っぽい場合があるので、その場合は茎の全体の表面を剥く。<br>だいたい豚バラと大きさを揃えて切ったら、フライパンに残った豚の脂を使って<strong>4分程度中火で焼く。少し焦げても構わない</strong>ので、押さえつけつつしっかり焼く。その後取り出しておく。</p>

<p class="wp-block-paragraph"><strong>3.</strong>フライパンをペーパーで軽くぬぐったら、油大さじ1.5とマスタードシードを入れ、中火で熱する。パチパチ弾けてきたらフタをして音が止むまで待つ。フタを開けてクローブとシナモンスティックを入れ、シュワシュワと泡が出て香りが立つまで熱する。</p>

<p class="wp-block-paragraph"><strong>4.</strong>火を強めの中火にし、玉ねぎと脱水用の塩を入れて広げたら、玉ねぎが色づき始めるまで放置する。2～3分して色づき始めたら軽く混ぜ、差し水をする。蒸し焼きの状態にしてヘラで玉ねぎを潰しながら水分を飛ばす。</p>

<p class="wp-block-paragraph"><strong>5.</strong>水分が飛んできて玉ねぎがまた色づき始めたら、〈GGペースト〉を入れてまた蒸し焼きにする。ヘラでさらに玉ねぎを潰しながら、全体が馴染んで水分が飛んでくるまで炒める。</p>
