<p>こんにちは。ハセガワタクミ(カルダモン26)です。今回はカルディで販売されている「青いにんにく辣油」のレビューです。実際に食べてみた感想と、おすすめの食べ方をご紹介します。</p>



<p>結論を先に申し上げると、辛味調味料というより旨味調味料なので、<strong>淡白な味わいのものと合わせるとこの「青いにんにく辣油」の良さが活かせる</strong>と思います。<br>よければ最後までご覧ください。</p>

<h3 class="wp-block-heading">1.ぶっちゃけ辛くない</h3>



<p>「青いにんにく辣油」、青唐辛子＝辛いと刷り込まれている自分としては、いったいこれはどんな辛さなのだろうといざ食べると……</p>



<p><strong>……あんまり辛くない。</strong></p>



<p>とくに、食べてすぐの辛みはソフトタッチ。後から辛さがちょっとだけ追いかけてきます。それに、唐辛子とは違う辛みがちょっとあるな……と思って原材料を見ると、わさび菜が入っている様子。</p>

<p>わさび菜の少しピリッとする感覚は唐辛子のホットな辛みとはまた別物。種類の違う辛みで奥行きが出ている感じはありますが、全体的な辛さはかなり控えめです。</p>



<p>同じくカルディで販売されている「ハリッサ」も辛さは控えめ。カルディの調味料は辛さが抑えられている傾向にあるので、辛いのが苦手な方でも楽しめそうです。</p>

<h3 class="wp-block-heading">2.にんにく臭は見た目のわりに控えめ</h3>

<p>フタを開けると一面のにんにく。ビンの横からもしっかり見えていましたが、このにんにくスライスの量は壮観。</p>



<p>でも、<strong>にんにく臭はほとんど感じず。</strong>加熱されていて、臭みは飛んでいるようです。</p>



<p>単体で口にすると、にんにくが甘い！それもそのはず。<strong>加熱されたにんにくは、その臭みの成分が甘みに変わるのです。</strong></p>



<p>食べていてクセがないし、甘みがあるからついついパクパクいけてしまいます。<br>だけど、<strong>食後はさすがに「にんにくを食べた感」</strong>が口に残ります。<strong>いくら食べる前は匂わないからといって、大事な誰かと会う前に食べるのは控えたほうがよさそうです。</strong></p>



<h3 class="wp-block-heading">3.旨みの要素が入っています</h3>



<p>私がこの「青いにんにく辣油」を旨味調味料と評したのは、かつお出汁が入っているから。あと、ごまを噛みつぶしたときに広がる油も旨みを感じやすくする後押しをしてくれます。</p>



<p>加熱して甘みを引き出したにんにく、かつお出汁、ごまなどが合わさり、旨みを感じやすい要素が詰まったこの「青いにんにく辣油」は辛みが抑えられていることもあり、旨味調味料と言ったほうがよいのかな、と思います。</p>

<p>「辣油」なんだから、まずは餃子からいきましょう。<br>わざわざ餃子を作るのもアレなので、味の素の「ギョーザ」を焼いて、一緒にいただくことにします。</p>

<p>一口パクリと食べると……</p>



<p><strong>「あれ？青いにんにく辣油、どこ行った？」</strong></p>



<p><strong>よく噛みしめると、餃子に旨みがプラスされていて、もちろん美味しい</strong>のですが、「青いにんにく辣油らしさ」は行方不明に。</p>



<p><strong>元々の餃子のにんにくのインパクトがあるので、埋もれてしまったのかも</strong>しれません。<br>にんにくなしの「しょうがギョーザ」と一緒に食べるなら、もっと「青いにんにく辣油らしさ」が活かせるかもしれません(それじゃ本末転倒)。</p>

<p>餃子は元々のインパクトが強いから埋もれてしまったのだろうと推察し、<strong>炭水化物と合わせる</strong>のはどうだろうと、チャーハンを作ってみました。<br>シンプルに、<strong>ご飯、卵、塩、胡椒、「青いにんにく辣油」だけ</strong>で作りました。</p>

<p><strong>これはうまい！</strong></p>



<p><strong>ほかの具材は卵だけのシンプルなチャーハンなので、「青いにんにく辣油」の旨みを存分に味わえます。</strong>にんにくスライスも具材としてしっかり機能しています。</p>

・ご飯・・・200g
・卵・・・・1個
・塩・・・・2g
・胡椒・・・0.5g
・油・・・・大さじ1.5

・青いにんにく辣油・・・ティースプーン3杯～</pre>



<p><strong>1.</strong>フライパンに油を強めの中火で熱し、溶き卵を流したらすぐにご飯を入れる。タイマーを3分にセットする。</p>

<p><strong>3.</strong>タイマーが残り1分になったところで青いにんにく辣油を入れて、フライパンを振りながらよく混ぜ合わせる。仕上げに胡椒を振り、3分経過したら皿に盛り、好みで上からさらに青いにんにく辣油をかけて完成。</p>

<p>ご飯のように、それ自体の味わいが控えめなものを美味しくするのがこの「青いにんにく辣油」と確信し、次に選んだのが<strong>淡白な味わいの白身魚。蒸し魚の調味料として活躍間違いなしだろう</strong>と作ってみました。</p>

<p><strong>蒸したタラのプリップリな身と旨みが染み出た蒸し汁に、「青いにんにく辣油」のコクと旨みが合わさって最高のペアリング。</strong>このタラでご飯が進むぐらい、食べ応えが出ます。</p>



<p>本当に美味しかったので、これも作り方をメモ。</p>

・タラの切り身・・・2切れ
・塩・・・・・・・・1切れにつきふたつまみ
・酒・・・・・・・・50cc
・水・・・・・・・・50cc
・長ネギ・・・・・・1本

・青いにんにく辣油・・・好きなだけ</pre>



<p><strong>1.</strong>タラの切り身に塩を振って身に軽くすり込んで15分ほど置く。<br>その間に湯を沸かし、大き目のボウルに張っておく。</p>

<p><strong>2.</strong>タラを霜降りする。<br>タラを湯につけ、軽く洗うようにする。表面が白くなったら取り出し、フライパンに並べる。</p>

<p><strong>3.</strong>タラを並べたフライパンに、酒と水、適当な大きさに切ったネギを並べて火にかけ、沸騰してきたらフタをして弱めの中火にし、6～7分蒸す。</p>

<p>カルディの<strong>「青いにんにく辣油」</strong>は、青唐辛子とからし菜の2種の辛みが奥行きを感じさせるようにできています。</p>



<p>でも、<strong>全体的に辛みは控えめで、</strong>後からちょっと来る程度。むしろ、甘みを引き出したにんにくや弾けるごま、かつお出汁を使った<strong>旨味調味料としての側面が強い商品</strong>だと思います。</p>



<p><strong>その持ち味を生かすためには、</strong>すでに、にんにくを使っている料理ではなく、ご飯や白身魚など、<strong>淡白な味わいの食材と合わせるのがおススメです。</strong></p>



<p>辛いモノを期待していた自分からすれば少し残念でしたが、旨味調味料として捉えたら、かなり良い商品だと思います。にんにくたっぷりな見かけの割に食べやすいのも◎</p>

<p>こんにちは。ハセガワタクミ(カルダモン26)です。今回は輸入食料品店の「カルディ」で販売されている<strong>「ハリッサ」</strong>の<strong>レビューとレシピ2つをご紹介</strong>します。</p>



<p><strong>この手の瓶詰め調味料はついつい余らせがち</strong>で、いつも泣く泣く捨ててしまう……ということが多かったのですが、<strong>この「ハリッサ」は使い切れる予感しかしません。</strong><br>それほどに感銘を受けたので今回レビューしたいと思います。</p>

<p>このハリッサを一口食べたときに思ったのが、<strong>「パプリカの甘みと香りが真っ先に来た」</strong>ということでした。</p>



<p><strong>いかにも辛そうな見た目</strong>で「チリペースト」と名乗っているのだから、よほど辛いのだろうと思っていたら<strong>そんなことはなく、唐辛子の辛みは、パプリカの甘みを引き締める程度</strong>で、そんなに辛くないと感じました(辛さに敏感な方は辛みをしっかり感じるかもしれません)。</p>



<p>本場の物は汗をかくほど辛いとのことですが、<strong>日本人向けに、パプリカを多めにしてアレンジされている</strong>のだと思います。</p>



<p>だから、よほど辛いモノが苦手な方でなければ美味しくいただけると思います。</p>

<p>だから、このハリッサも、<strong>「食べた後は人に会えなくなるんだろうな」</strong>と思っていたら、<strong>意外とにんにくは控えめ。</strong>フタを開けたときも、にんにくが使われている瓶詰め調味料あるあるの「うわ～」となる感じはありません。</p>



<p>食べてみると、<strong>にんにくが入っている感じのコクは感じるのですが、そんなに主張してこない印象。</strong></p>

<p>この「ハリッサ」には<strong>ごま、コリアンダー、クミンのホールスパイス</strong>が入っています。ホールスパイスとは、パウダーになっていない状態のスパイスで、コリアンダーシード、クミンシードといいます(ごまはセサミシード？)。</p>



<p>これらの<strong>ホールスパイスを噛みしめたときの弾ける香りがたまりません。</strong>クミンシードを嚙みしめたときは、使った料理の味わいを深めるような香りがし、コリアンダーシードを嚙みしめたときは、その強い清涼感で、口の中をさっぱりさせてくれます。</p>

<p>ただ、クミンシードと比べてコリアンダーシードは若干クセが強く感じられます。キツくなりすぎないように砕いてから入っているので、初めての方でも食べられるようになっているとは思いますが、気になる方は気になるかも。ここは数少ない注意点です。</p>

<p><strong>1.</strong>鶏もも肉は筋と余分な皮、脂肪を取り、フォークであちこちを刺しておく。その後、塩、こしょうをまぶしておく。</p>

<p><strong>2.</strong>鶏肉を焼く。フライパンに油とニンニクを入れ、弱めの中火～中火で熱する。にんにくの香りが立ちつつも、焦げないように熱したら、弱火にしてから鶏肉を皮目から入れ、クッキングシートなどを上に重ね、水を張った小鍋などで重しをして焼く。</p>

<p><strong>3.</strong>鶏肉の6～7割に火が通ってきたら重しを外して火を中火に強め、皮がパリッとするまで、時々皮を見ながら焼く。皮がパリッとしたらひっくり返して、身を焼き目はつかなくてもいいのでサッと焼く。</p>
