<p class="wp-block-paragraph">こんにちは、ハセガワタクミ(カルダモン26)です。今回は麻婆茄子とナスキーマカレーが融合した、<strong>「麻婆咖喱茄子」</strong>のご紹介です。</p>



<p class="wp-block-paragraph">キーマカレー界の定番ともいえる<strong>「ナスキーマ」</strong>。<br>もちろん美味しいのですが、「いつもの味」。安心感はありますが、驚きはありません。</p>



<p class="wp-block-paragraph">そんなナスキーマでタッグを組んでいる「ナスとひき肉」の組み合わせで思い浮かぶのは、<strong>「麻婆茄子</strong>」。トロトロのナスにひき肉が絡みつく、得も言われぬ幸福感のある中華料理です。</p>



<p class="wp-block-paragraph">ならば、<strong>麻婆茄子のエッセンスを用いてカレーを作れば変化がついて最高なのでは？</strong>というわけですが、<strong>「麻婆」と「カレー」の融合は経験上、なかなか難しい</strong>ものです。</p>



<p class="wp-block-paragraph">麻婆豆腐カレーをはじめとする「麻婆」と「カレー」の融合は色んなレシピで試みられており、自分も色々作ってみました。</p>



<p class="wp-block-paragraph">作ってみると分かるのが、<strong>ちょっとした調味料の差で、「麻婆」にも「カレー」にも転んでしまう</strong>危うさを持っているということ。</p>



<p class="wp-block-paragraph">個人的には<strong>「カレーのつもりで作ったのに、麻婆に乗っ取られた」という経験が数知れず……。</strong></p>



<p class="wp-block-paragraph">なので、今回は、<strong>ギリギリ「麻婆」要素を残しつつ、「カレー」主体で作ります。</strong>カレー粉を入れただけの麻婆茄子カレーとは違う、<strong>スパイスブログならではのアプローチで挑みます。</strong></p>

・ナス・・・200g(乱切り)
・油・・・・大さじ1(ごま油はNG)

・豚ひき肉・・・・150g
・玉ねぎ・・・・・100g(みじん切り)
・脱水用の塩・・・1g
・差し水・・・・・50cc
・にんにく・・・・5g(みじん切り)
・しょうが・・・・5g(みじん切り)

・豆板醤・・・・・小さじ1
・塩・・・・・・・1g
・醤油・・・・・・小さじ1
・砂糖・・・・・・小さじ1
・酢・・・・・・・小さじ1

・水・・・・・・・・・・200cc
・鶏ガラスープの素・・・小さじ1

・パプリカ・・・・30g(1cm角に切る)

〈水溶き片栗粉〉
・片栗粉大さじ1
・水50cc

〈ホールスパイス〉
・カルダモン・・・・2粒(サヤを潰して中を使う)
・クミンシード・・・ひとつまみ

〈パウダースパイス〉
・コリアンダー・・・・・4g(小2)
・クミン・・・・・・・・2.5g(小1)
・カイエンペッパー・・・1g(小1/2)
・ターメリック・・・・・1g(小1/4)
・ナツメグ・・・・・・・0.5g(約小1/4)</pre>



<h2 class="wp-block-heading"><span id="toc4">麻婆咖喱茄子の手順</span></h2>



<p class="wp-block-paragraph">【手順】<br>1.ナスは乱切りにし、5〜10分水にさらす。</p>



<p class="wp-block-paragraph">表面の水気を拭き取ったら、フライパンに油を中火で熱し、皮目から焼く。皮の色が鮮やかになったら他の面も焼き、軽く焼き目がついたら取り出す。</p>



<p class="wp-block-paragraph"><strong>水溶き片栗粉は最初に作っておく。</strong></p>

<p class="wp-block-paragraph">2.油が足りなければ小さじ2ほど補い、中火で熱する。</p>



<p class="wp-block-paragraph">カルダモンの中身とクミンシードを入れて30秒ほど熱し、クミンシードがシュワシュワとしてきたら強めの中火にし、玉ねぎと脱水用の塩を入れて2〜3分ほど放置する。</p>



<p class="wp-block-paragraph">茶色の焦げ目ができてきたら差し水をし、全体を茶色にする。</p>

<p class="wp-block-paragraph">3.弱火〜弱めの中火にしてにんにくとしょうが、豆板醤を入れ、豆板醤を焦がさないように香りが立つまで炒める。</p>

<p class="wp-block-paragraph">4.中火にしてひき肉と塩を入れ、出てくる脂が透明になるまでしっかり炒める。ひき肉が少しカリッとしてきたら弱火にし、〈パウダースパイス〉を入れて、粉っぽさがなくなるまでよく混ぜる。</p>

<p class="wp-block-paragraph">5.中火にして水と鶏ガラスープの素、醤油、砂糖を入れ、煮立ってきたらナスを戻し入れ、3分ほど煮込む。</p>

<p class="wp-block-paragraph">6.一旦火を弱めて〈水溶き片栗粉〉を入れたらすぐによくかき混ぜ、中火〜強めの中火で煮立たせ、パプリカを入れたら、最低でも1分加熱し、片栗粉に火を通す。</p>



<p class="wp-block-paragraph">こうすることで水戻りしなくなります。最後に酢を入れて混ぜたら完成！</p>

<p class="wp-block-paragraph">2.〈カシューナッツペースト〉を作る。鍋に水200ccを沸かし、カシューナッツを10分茹でる。<strong>茹でたお湯ごと</strong>カシューナッツをミキサーに入れて、ペースト状にする。</p>

<p class="wp-block-paragraph">3.フライパンに油を中火で熱し、〈チキンティッカ〉を焼く。焼き目がついたらひっくり返し、計7〜8分焼く。その後、〈チキンティッカ〉は油ごと取り出しておく。このとき、フライパンに残った焦げはきれいにしておく。<br>→<strong>〈チキンティッカ〉として食べることができます！</strong></p>

<p class="wp-block-paragraph">4.フライパンに油を弱めの中火で熱し、〈スタータースパイス〉を熱する。シナモンとクローブの香りが立ってきたら、強めの中火にし、玉ねぎと塩を入れてフライパンに広げ、2〜3分放置する。</p>

<p class="wp-block-paragraph">5.玉ねぎが色づいてきたら、差し水をし、焦げを溶かすように広げつつ、玉ねぎをヘラでつぶす。水分が飛んできて、また色づいてきたらもう一度差し水をして、全体を茶色にする。</p>

<p class="wp-block-paragraph">6.青唐辛子を入れ、香りが立ってきたら、ホールトマト缶を入れ、よくつぶしながら水分を飛ばしていく。ヘラですくっても水気が垂れてこなくなったら、弱めの中火に落として<strong>〈カシューナッツペースト〉</strong>を入れる。<strong>焦げないように</strong>よく混ぜながら、水分を飛ばしていく。</p>

<p class="wp-block-paragraph">7.ヘラですくっても水気が垂れてこなくなったら、ナツメグと取り出していた〈チキンティッカ〉を戻し入れ、6.となじませたら、水と牛乳を入れて中火にし、一度沸騰させる。</p>
