<p>こんにちは。ハセガワタクミ(カルダモン26)です。今回はくたくたに茹でた菜の花で作る緑のソースと海老の色合いが春らしい、「くたくた菜の花ソースとエビのパスタ」のレシピです。</p>

<p>菜の花パスタといえば、菜の花が具材として入ったパスタを思い浮かべます。アサリやベーコンと一緒に炒めたパスタ。</p>



<p>もちろんそれも美味しいのですが、ネットで色々見ていると、ちょっとビックリするレシピが。</p>



<p>それは菜の花をくたくたに茹でて、ソースにしてしまうというもの。</p>

<h2 class="wp-block-heading">くたくた菜の花ソースと海老のパスタの手順</h2>



<p>【手順】<br><strong>1.</strong>菜の花はよく洗い、茎の根元の筋張った部分をピーラーで剥き、ざく切りにする。</p>



<p>鍋に湯を沸かして塩を入れ、パスタと菜の花を同じ鍋で茹でる。このとき、パスタは指定の時間より1分短く、菜の花はクタクタになるまで8分程度茹でる。<br>ゆで時間が違う場合は時間差で同じ鍋に入れて茹でる。</p>

<p><strong>2.</strong>パスタと菜の花を茹でている間に、フライパンに油とマスタードシードを入れて中火で熱する。パチパチ音が鳴り始めたらフタをして、音が止むまで待つ。</p>

<p><strong>3.</strong>フェンネルシードとにんにくを入れて、香りが立つまで炒めたら、海老を入れて焼き、両面の色が変わったら取り出す。</p>

<p><strong>4.</strong>鍋から菜の花と茹で汁を大さじ2〜3程度入れ、菜の花を崩しながら乳化させ、ソースを作る。<br>パスタを入れて絡め、海老を戻し入れる。塩で味付けしたら完成！</p>

<p>菜の花を具材ではなくソースにするという発想には驚きましたが、いざ作ってみると、甘みが際立った菜の花がパスタに絡んだときの味わいはこれまでにない、新しい菜の花の体験でした。</p>

<p>こんにちは。ハセガワタクミ(カルダモン26)です。今回は春に食べたい菜の花のカレー、「菜の花と豚バラのマスタードカレー」のレシピです。</p>



<p>菜の花のほろ苦さと豚バラの脂がもたらす甘みを、粒マスタードを加えた酸味のあるカレーがまとめ上げます。</p>

<p>私がインスタグラムに初めて投稿したレシピとして個人的に思い入れのあるレシピ。<br>2年経ってカレーの嗜好が変わったこともあって、当時とは違う作り方になりましたが、ここでご紹介したいと思います。</p>



<p>菜の花のほろ苦さを、豚バラ肉の甘みが包み、さらにマスタードを加えて煮込んだカレーの酸味がまとめる、<strong>ちょっとオトナの味わい</strong>です。</p>



<p>これまで菜の花は塩ゆでしてから加えていましたが、今年は<strong>焦げ目がつくまで焼いてみる</strong>ことに。<br><strong>焦げた香味が加わって、より奥行きのある味になりました。</strong></p>

<p>菜の花は軽く焦がすぐらいまでじっくり焼くことで、苦味に香ばしさが加わって美味しくなります。それによって甘みも引き立つのでおススメの方法。</p>



<p>煮込んでしまうと色が変わってしまうので、くれぐれもカレーに入れるときは最後に。</p>

<p>【手順】</p>



<p><strong>1.</strong>豚バラブロック肉は一口大に切り、塩をまぶして小麦粉を振るっておく。フライパンに油を熱し、脂の部分から焼き、軽く焼き目がつくまで焼いたら取り出しておく。</p>

<p><strong>2.</strong>菜の花は<strong>茎の根元近い部分の表面をピーラーで剥き、筋を取っておく。</strong>上のほうまで筋っぽい場合があるので、その場合は茎の全体の表面を剥く。<br>だいたい豚バラと大きさを揃えて切ったら、フライパンに残った豚の脂を使って<strong>4分程度中火で焼く。少し焦げても構わない</strong>ので、押さえつけつつしっかり焼く。その後取り出しておく。</p>

<p><strong>3.</strong>フライパンをペーパーで軽くぬぐったら、油大さじ1.5とマスタードシードを入れ、中火で熱する。パチパチ弾けてきたらフタをして音が止むまで待つ。フタを開けてクローブとシナモンスティックを入れ、シュワシュワと泡が出て香りが立つまで熱する。</p>

<p><strong>4.</strong>火を強めの中火にし、玉ねぎと脱水用の塩を入れて広げたら、玉ねぎが色づき始めるまで放置する。2～3分して色づき始めたら軽く混ぜ、差し水をする。蒸し焼きの状態にしてヘラで玉ねぎを潰しながら水分を飛ばす。</p>

<p><strong>5.</strong>水分が飛んできて玉ねぎがまた色づき始めたら、〈GGペースト〉を入れてまた蒸し焼きにする。ヘラでさらに玉ねぎを潰しながら、全体が馴染んで水分が飛んでくるまで炒める。</p>

<p><strong>7.</strong>火を弱火にして〈パウダースパイス〉と塩、砂糖を入れ、全体がもったりとしてスパイスと油が馴染むまで2分間炒めながらよく混ぜる。</p>

<p><strong>8.</strong>豚バラ肉を戻し入れ、よく混ぜたら水を注ぎ、沸騰したら弱火で10分、フタをして煮る。</p>

<p><strong>9.</strong>粒マスタードを入れてフタを開けたまま5分煮込み、その後菜の花を戻し入れる。全体を混ぜ、菜の花の色が変わる前に火を止めたら完成。</p>

<p><strong>菜の花といえば？からし和え</strong>が真っ先に浮かぶ私。</p>



<p>ほろ苦い味わいと、からしのツンとくるのがオトナの味わいなような気がして、これをおいしいと思うようになったとき、成長したものだと感心しました(舌が鈍感になっているだけともいう)。</p>

<p>今回はネットで見かけた<strong>「焼き菜の花」</strong>に挑戦。<strong>いつも茹でていた菜の花をじっくり焼いてみます。</strong>一緒に頂くのはクミンを軽くまぶした牛肉。別々に焼いたあと、最後にサッと炒め合わせます。</p>



<p>じっくり焼いて苦味よりも甘みが際立つ菜の花はお肉の脂と旨みを吸いこんで、<strong>野菜とは思えないほど旨みあふれる存在感。</strong>マスタードをつけながらいただくと絶品です。</p>

<p>菜の花は茹でるのがメジャーで、あまり<strong>「焼く」</strong>ということをしてこなかったのですが、いざ焼いてみると苦味の奥から甘みが際立ってくるように変化して、一気に「焼き菜の花」が好きになってしまいました。</p>

<h4 class="wp-block-heading">お肉の下味にクミンを</h4>



<p>今回使ったのは牛ステーキ肉。スーパーで買ってきた外国産のお肉です。<br>お肉の風味をよくするために、<strong>こしょうの代わりにクミン</strong>で臭み消し&amp;香りづけします。</p>



<p>最後に炒め合わせるときの醤油とも相性がよいです。</p>

<p>【手順】<br>1.牛肉の下ごしらえをする。<br>牛肉はフォークであちらこちらを刺したあと、食べやすい大きさに切る。<br>塩、クミンパウダー、小麦粉をまぶしておく。</p>

<p>2.フライパンに油をしき、中火で熱する。牛肉を入れ、片面に焼き目をつけたらひっくり返して軽く焼き、脂をフライパンに残して取り出す。</p>

<p>3.菜の花は良く洗って水気を切った後、茎の下の部分の筋ばったところをピーラーで剥いておく。<br>その後、フライパンに残った脂を中火で熱し、菜の花を4分程度焼く。ヘラで押さえて焼き、焦げ目がついたらひっくり返してまた焼く。<br>このとき、菜の花が油を吸うので、油が足りなければ補う。</p>
