<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回はインスタグラムで過去に投稿した、<strong>「麻辣長ネギキーマ」のご紹介</strong>です。<br>雑誌<strong>「RiCE」</strong>で取り上げられていた<strong>「脱・玉ねぎ」に触発</strong>されて作ったもので、玉ねぎの代わりに、長ネギを使いました。</p>

<h2 class="wp-block-heading"><span id="toc4">麻辣長ネギキーマの手順</span></h2>



<p class="wp-block-paragraph">1.フライパンに油を弱めの中火で熱し、<strong>〈スタータースパイスA〉</strong>を入れる。 <strong>マスタードシードが弾けたら弱火にしてフタ</strong>をする。 音がやんだら<strong>〈スタータースパイスB〉</strong>を入れ、中火にして<strong>花椒の香りが立つまで加熱</strong>する。</p>



<p class="wp-block-paragraph">2.<strong>強めの中火</strong>にして、 <strong>長ネギと脱水用の塩</strong>を入れ、 馴染ませたら、 <strong>3分ほど放置</strong>する。 うっすらと焦げたら差し水(分量外・50cc)をして、 さらに5分ほど炒め、 ネギの水分を飛ばしていく。</p>

<p class="wp-block-paragraph">3.にんにく、しょうがを入れて香りを立たせたら、<strong>豆板醤と甜麺醤</strong>を入れ、中火にして<strong>、醤が焦げないようによく混ぜながら、香りを立たせる。</strong> 油が足りなくなっていたら、 適宜足す。</p>



<p class="wp-block-paragraph">4.豚ひき肉を入れて火を通したら、<strong>弱火にして〈パウダースパイス〉</strong>と塩を入れてよく混ぜる。 <strong>ホールトマトを潰して</strong>加え、<strong>よく水分を飛ばし</strong>、<strong> 水を入れて弱めの中火で10分</strong>煮込む。</p>

<p class="wp-block-paragraph">5<strong>.オイスターソースと後入れ用の輪切りネギ</strong>を入れてよく混ぜ、垂れてくる水分が飛んだら完成! 白髪ネギや辛ネギを添えても。</p>

<p class="wp-block-paragraph">玉ねぎがなくてもカレーになるというのは、完全に盲点でした。雑誌「RiCE」の特集と、このカレーを作った経験から、<span class="marker-under">「スパイスカレー=玉ねぎ炒め」にとらわれている自分に気づく</span>ことができました。</p>



<p class="wp-block-paragraph">このカレーは最初合いびき肉で考えていたのですが、肉のパンチが強すぎて、豚ひき肉になったという経緯があります。<br>豚ひき肉なら、長ネギの甘みや香りを消さずに、ほどよく旨味と甘味があるので、おすすめの食材です。</p>
