<p>こんにちは。ハセガワタクミ(カルダモン26)です。今回はじゃこの旨みが鶏に染み出した、「鶏とじゃこの和風キーマカレー」をご紹介します。</p>



<h3 class="wp-block-heading" id="このレシピについて">このレシピについて</h3>



<p>以前に作った「鶏ひき肉と厚揚げの梅カレー」のように、鶏ひき肉にだしの旨みを吸わせるようなキーマカレーが美味しかったので、ほかの具材でもできないかと探していたところ、旨みと食感をプラスできる、ちりめんじゃこを発見しました。</p>

<p>鶏ひき肉は他の肉に比べて主張が少ない分、かつおと昆布だしに加え、ちりめんじゃこの旨みをたっぷり吸い込んでくれます。</p>



<p>齋藤絵理さんの<strong>「魯珈のスパイスカレー本」</strong>のレシピを参考に、梅干しはカレーに入れるのではなく薬味として。<br>梅干しをカレーに溶かしたときはコクとまろやかさが加わるのですが、カレーの上にそのまま乗せると、これはこれでダイレクトに梅干しの旨みが伝わり、味にメリハリがつきます。</p>

<h4 class="wp-block-heading" id="だしは添加物を抑えたものを">だしは添加物を抑えたものを！</h4>



<p>味噌汁には当ブログでもよく使っている「だしの素」。サッと溶かすだけで非常に便利なのですが、スパイスカレーにしたとき、香りにトゲが出てしまう(合成感のある感じ？)のであまりおススメできません。あと、塩分調整が難しくなります。</p>



<p><strong>無添加のものや添加物を抑えたもの</strong>をご使用いただくか、もういっそ、昆布とかつおぶしでおだしを取ってみるのはいかがでしょうか。</p>



<p>私は最初だしを取るのって面倒だと思っていたのですが、そんなことありませんでした。家庭で取るのであれば、あまり神経質になる必要もありません。<strong>時間とコスパとの相談ではありますが、ぜひおだしを取って、カレーを作ってみていただきたいです。</strong></p>



<p>私がいつも使っているのはこのかつおぶしです。だし用でひと削りが大きくなっていますが、お好み焼きや、焼きそばに使っても◎。大きなひらひらと強い風味、旨みを感じられます。</p>

〈かつおと昆布だし〉

<h2 class="wp-block-heading" id="鶏とじゃこの和風キーマカレーの手順">鶏とじゃこの和風キーマカレーの手順</h2>



<p>【手順】<br>1.〈かつおと昆布だし〉の準備をする。<br>水(300cc)に昆布(3g)を漬けて30分以上置いたら、弱めの中火にかけて、10分間沸騰させないように昆布のだしを取る。途中沸騰しそうになったら火を弱める。</p>



<p>その後、昆布を取り出し、一度沸騰させたあと、かつおぶしを入れて3分ほど置いておく。<br>ザルとペーパーを使って濾し、〈かつおと昆布だし〉の完成です。濾した後はだいたい200ccほどになります。</p>



<p>2.フライパンに油とマスタードシードを入れたあとに中火にかける。マスタードシードがパチパチと弾けてきたらフタをして、音が止むまで熱する。<br>音が止んだらフタを取り、カルダモンを入れて、皮が色づき、ぷっくりと膨らんでくるまで熱する。その後、クミンシードを入れて、シュワシュワと泡立ち、色づいて香りがしてくるまで約30秒熱する。</p>

<p>3.強めの中火に火を強め、玉ねぎと脱水用の塩を入れて広げる。<br>色が変わり始めるまで放置したら、差し水をして、焦げを全体に広げながら、炒め煮のようにし、玉ねぎを潰す。</p>

<p>水分が飛んできたら2回目の差し水とにんにく、しょうがのみじん切りを加え、水分を飛ばしながら、にんにく、しょうがの香りが立ってくるまで玉ねぎを潰しながら炒める。</p>

<p>5.中火にして鶏ひき肉を入れて、4.とよく混ぜる。その後、ちりめんじゃこも入れてよく混ぜたら、〈かつおと昆布だし〉を入れて、沸騰させる。</p>

<p>6.だしが沸騰したら弱火にしてフタをし、10分煮込む。</p>

<p>7.10分後、淡口醬油と酢を入れて火を強め、ひと煮立ちさせて火を止める。</p>



<p>8.鶏ひき肉が水分を吸って馴染むまで、10分ほど寝かせてください。</p>



<p>9.最後にキーマを温め、味見をし、塩味が足りなければ少し補う。最後に梅干しを乗せるので、気持ち薄めにしておくのがポイントです。</p>



<p>10.皿にご飯を盛り、〈キーマカレー〉をかけて、その上から梅干し、しょううがの千切り、小口切りにした細ネギを乗せたら完成！</p>
