<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回はちょっとビターな香味と酸味で、サバのうまさが引き立った、<strong>「スリランカ風サバカレー」</strong>をご紹介します。</p>



<p class="wp-block-paragraph">このカレーは<strong>サバが主役</strong>で、<strong>カレーはそれを引き立てるソース</strong>のよう。<br>新鮮な切り身で作るのがとても美味しいです。</p>

<p class="wp-block-paragraph"><strong>スリランカ</strong>は日本と同じく<strong>島国</strong>。魚が豊富で、かつお節(モルディブフィッシュ)を使うぐらいですから、<strong>スリランカ料理と魚は切っても切れない</strong>関係があります。</p>



<p class="wp-block-paragraph">今回ご紹介するサバカレーは、スリランカらしいゴラカの酸味と燻製香が効いたカレー。<br>カレーそのものよりは、美味しさを引き立てるソースをまとわせたサバを食べるような感覚です。</p>

<p class="wp-block-paragraph">サバの身をほぐしてカレーと絡ませ、パラパラのライスと混ぜると、カレーの香味とサバの旨み、ライスの甘みと色々混じって口の中が賑わいます。</p>

<p class="wp-block-paragraph">このカレーは<strong>サバが主役。サバの油の旨みが美味しい</strong>です。</p>



<p class="wp-block-paragraph">サバを美味しく食べるために、<strong>霜降り</strong>して<strong>臭みを抜き</strong>、<strong>ゴラカとレモン汁の酸味で味を引き締め</strong>ます。</p>



<p class="wp-block-paragraph"><strong>切り身をドカンと</strong>入れて、サバの味をしっかり残しつつも、インパクトのある見た目に。<br>サバの他にはカツオ、マグロ、カジキ、ブリなどでもできると思います。</p>

<p class="wp-block-paragraph"><strong>塩が足りないと美味しくない</strong>ので、味見をしながら、ちょっとキツめかな？と思うぐらいまで入れてみてください。<br>元々ビター寄りのカレーですが、<strong>苦味が立ちすぎていると感じたら、塩を足してみると味が整います。</strong></p>

<h2 class="wp-block-heading"><span id="toc7">スリランカ風サバカレーの手順</span></h2>



<p class="wp-block-paragraph">【手順】<br><strong>0.(前日準備)</strong>ゴラカを使う場合は水に一晩漬けて切りやすいようにする。</p>

<p class="wp-block-paragraph"><strong>1.</strong>サバを<strong>霜降り</strong>する。<br>サバの両面に塩を振り、水気が浮いてくるまで10分ほど置く。<br>水気を拭き取り、沸騰させた、たっぷりの湯を大きめのボウルに張る。<br>切り身を湯に入れ、表面の色が変わったら身が反る前に取り出し、水気を拭う。</p>

<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。今回は輸入食料品店の「カルディ」で販売されている<strong>「ハリッサ」</strong>の<strong>レビューとレシピ2つをご紹介</strong>します。</p>



<p class="wp-block-paragraph"><strong>この手の瓶詰め調味料はついつい余らせがち</strong>で、いつも泣く泣く捨ててしまう……ということが多かったのですが、<strong>この「ハリッサ」は使い切れる予感しかしません。</strong><br>それほどに感銘を受けたので今回レビューしたいと思います。</p>

<p class="wp-block-paragraph">「ハリッサ」はアフリカ大陸のチュニジアでよく使われる、唐辛子をはじめとしたスパイスを混ぜたペーストで、本場のものは汗をかくほどの辛さとのこと。</p>

<p class="wp-block-paragraph">このハリッサを一口食べたときに思ったのが、<strong>「パプリカの甘みと香りが真っ先に来た」</strong>ということでした。</p>



<p class="wp-block-paragraph"><strong>いかにも辛そうな見た目</strong>で「チリペースト」と名乗っているのだから、よほど辛いのだろうと思っていたら<strong>そんなことはなく、唐辛子の辛みは、パプリカの甘みを引き締める程度</strong>で、そんなに辛くないと感じました(辛さに敏感な方は辛みをしっかり感じるかもしれません)。</p>



<p class="wp-block-paragraph">本場の物は汗をかくほど辛いとのことですが、<strong>日本人向けに、パプリカを多めにしてアレンジされている</strong>のだと思います。</p>



<p class="wp-block-paragraph">だから、よほど辛いモノが苦手な方でなければ美味しくいただけると思います。</p>

<p class="wp-block-paragraph">だから、このハリッサも、<strong>「食べた後は人に会えなくなるんだろうな」</strong>と思っていたら、<strong>意外とにんにくは控えめ。</strong>フタを開けたときも、にんにくが使われている瓶詰め調味料あるあるの「うわ～」となる感じはありません。</p>

<p class="wp-block-paragraph">この「ハリッサ」には<strong>ごま、コリアンダー、クミンのホールスパイス</strong>が入っています。ホールスパイスとは、パウダーになっていない状態のスパイスで、コリアンダーシード、クミンシードといいます(ごまはセサミシード？)。</p>



<p class="wp-block-paragraph">これらの<strong>ホールスパイスを噛みしめたときの弾ける香りがたまりません。</strong>クミンシードを嚙みしめたときは、使った料理の味わいを深めるような香りがし、コリアンダーシードを嚙みしめたときは、その強い清涼感で、口の中をさっぱりさせてくれます。</p>

<p class="wp-block-paragraph">ただ、クミンシードと比べてコリアンダーシードは若干クセが強く感じられます。キツくなりすぎないように砕いてから入っているので、初めての方でも食べられるようになっているとは思いますが、気になる方は気になるかも。ここは数少ない注意点です。</p>

<p class="wp-block-paragraph"><strong>1.</strong>鶏もも肉は筋と余分な皮、脂肪を取り、フォークであちこちを刺しておく。その後、塩、こしょうをまぶしておく。</p>

<p class="wp-block-paragraph"><strong>2.</strong>鶏肉を焼く。フライパンに油とニンニクを入れ、弱めの中火～中火で熱する。にんにくの香りが立ちつつも、焦げないように熱したら、弱火にしてから鶏肉を皮目から入れ、クッキングシートなどを上に重ね、水を張った小鍋などで重しをして焼く。</p>

<p class="wp-block-paragraph"><strong>3.</strong>鶏肉の6～7割に火が通ってきたら重しを外して火を中火に強め、皮がパリッとするまで、時々皮を見ながら焼く。皮がパリッとしたらひっくり返して、身を焼き目はつかなくてもいいのでサッと焼く。</p>
