<h5 class="wp-block-heading"><span id="toc6">台湾風スパイス香る鶏ももの一枚揚げ</span></h5>



<p class="wp-block-paragraph">最近流行りの<strong>台湾から揚げ</strong>「大鶏排(タージーパイ)」。鶏むね肉を観音開きにして使うのがメジャーなようですが、<strong>今回は鶏もも肉を使ってジューシーに。</strong></p>



<p class="wp-block-paragraph">さっぱりとした鶏むね肉には五香粉だけでもしっかり香ると思うのですが、今回は脂が乗った鶏もも肉なので、カレーでおなじみ<strong>「クミン」</strong>と<strong>「コリアンダー」</strong>、さらには<strong>「クローブ」</strong>を追加して、<strong>香り高く、鶏のジューシーさに負けないしっかりとした香りに。</strong></p>



<p class="wp-block-paragraph">豪快な一枚揚げは<strong>ご飯のお供としても、ビールのお供としても最高！</strong><br>あとがけスパイスとして唐辛子と花椒をかけると、刺激マシマシ&amp;食欲ブーストで、大きな一枚揚げでもペロリといけちゃうと思います。</p>



<p class="wp-block-paragraph"><strong>長野の「山賊焼き」定食からも着想を得た</strong>今回の定食は、<strong>ボリュームたっぷりで満腹必至</strong>です。</p>



<h5 class="wp-block-heading"><span id="toc7">クミンとゴマでパクパク小松菜のナムル</span></h5>



<p class="wp-block-paragraph">スパイスが効いていて、豪快な鶏の一枚揚げには、<strong>箸休めとして小松菜のナムル</strong>を。茹でて和えるだけの簡単ナムルですが、和えるスパイスにひと工夫。</p>



<p class="wp-block-paragraph">ゴマ以外に、<strong>クミンシードやフェンネルシードを加えてスッキリ感を追加</strong>。口の中で弾けるスパイスの香りとスッキリ感でパクパクいただける小松菜のナムルができました。</p>

<p class="wp-block-paragraph">野菜や海藻類が少し足りないな、と思ったら味噌汁で補うのも選択肢です。<br><strong>大きな鶏の一枚揚げにご飯、ナムル、味噌汁と揃えば、大満足な定食の完成です。</strong></p>

<p class="wp-block-paragraph"><strong>鶏の一枚揚げで怖いのが「生焼け」</strong>ですが、今回は<strong>冷たい油から</strong>じっくり火を通し、さらに<strong>余熱</strong>で火を通し、最後の<strong>二度揚げ</strong>で〆るという<strong>3段構え</strong>でいきます。小さめのフライパンなら、油の量も少なく済みます。</p>



<p class="wp-block-paragraph">豪快に揚がった鶏肉を口に運ぶと<strong>スパイスの香りとジューシーな脂が広がります。</strong>〈あとがけスパイス〉で、さらに食欲ブースト！ごはんでもビールでもすっかり胃の中に入っていきます。<br>ただ、いくらペロリといけるといっても、<strong>ボリューム満点のため、小食の方は注意してください。</strong>小食の方には<strong>2人で鶏肉一枚ぐらい</strong>がちょうどいいかも。</p>



<p class="wp-block-paragraph">定食のメインとしてごはん、味噌汁といただくだけでなく、<strong>お酒のアテとしても、この鶏の一枚揚げ単品で是非どうぞ。</strong></p>

・鶏もも肉・・・1枚(250〜350g)
・塩・・・・・・鶏肉の1%(2.5～3.5g)
・砂糖・・・・・小さじ2
・酒・・・・・・大さじ2
・醤油・・・・・大さじ1
・にんにく・・・3g(すりおろし)
・しょうが・・・3g(すりおろし)

〈パウダースパイス〉
・五香粉・・・・・・1g
・クローブ・・・・・0.5g
・コリアンダー・・・2g
・クミン・・・・・・2g

〈衣〉
・小麦粉・・・大さじ2〜3
・片栗粉・・・大さじ2〜3

・揚げ油・・・鶏肉の半分以上が浸かるほど

〈あとがけスパイス〉
・鷹の爪・・・1本(激辛が好きな方は2本)
・花椒・・・・0.5g

〈付け合わせ〉
キャベツ・・・100g程度</pre>



<p class="wp-block-paragraph">【手順】<br>1.鶏もも肉は余分な脂や筋を除き、厚い部分は開くか切れ目を入れておく。<strong>フォークで全体を刺し、穴をあける。</strong><br><strong>皮は揚げたときにカリカリとして美味しい</strong>ので、はみ出た部分だけを除いて、<strong>剥かない</strong>ほうがよいです。</p>



<p class="wp-block-paragraph">2.鶏もも肉をボウルやバットに入れ、塩、砂糖をまぶしたら酒、醤油、にんにく、しょうが、〈パウダースパイス〉を全て混ぜる。30分以上は寝かせて馴染ませる(<strong>できれば一晩</strong>)。</p>

<p class="wp-block-paragraph">3.ポリ袋に〈衣〉の小麦粉、片栗粉を入れて軽く混ぜておく。漬け込んだ鶏肉は常温に戻しておき、水気を軽く切ってから入れて〈衣〉をまとわせる。</p>

<p class="wp-block-paragraph">4.フライパンに、鶏肉の半分以上が浸かるほどの油を注ぎ、鶏肉を皮目から入れて、<strong>冷たい油から</strong>15分、中火～強めの中火で揚げる。<strong>最高温度160℃を目安</strong>に油の温度を上げてください。途中、鶏肉の6～7割に火が入り、皮目がしっかり色づき、カリカリになっていたらひっくり返して揚げる。</p>

<p class="wp-block-paragraph">5.15分揚げたら一度取り出し、余熱で中心まで火を入れる。5分～10分ほど休ませておく。</p>



<p class="wp-block-paragraph">6.余熱で肉を休ませている間に〈あとがけスパイス〉を用意する。フライパンで鷹の爪と花椒を弱めの中火で2～3分乾煎りする。ミルに入れてこれらを挽いておく。</p>

<p class="wp-block-paragraph">2.鍋に小松菜が浸かるほどの水を沸かし、小松菜茹で用の塩をひとつまみ溶かしておく。<br>沸騰したら小松菜の茎の部分から茹で始め、1分～1分30秒経ち、茎がしんなりしてきたら葉の部分を入れ、1分茹でる。<br>ザルに上げ、冷水に取ってすぐに冷ます。</p>

<p class="wp-block-paragraph">3.小松菜を一口大に切り、人参は水気を絞る。<br>鶏がらスープの素、淡口醬油を野菜とよく混ぜたら、ゴマ油を入れてよく馴染ませる。乾煎りした〈ホールスパイス〉を入れてよく混ぜたら保存容器に入れて冷蔵庫へ。すぐ食べるのではなく、味が馴染んでからのほうが美味しいです。</p>

<p class="wp-block-paragraph">何の変哲もない味噌汁ですが、これがあるとないとでは「定食」感がまるで違います。</p>

・わかめ・・・・30g(戻したあと)
・大根・・・・・100g(短冊切り)
・油揚げ・・・・1枚(短冊切り)
・大根の葉・・・1本分(刻む)

・水・・・・・・400cc
・だしの素・・・2g
・味噌・・・・・大さじ1</pre>



<p class="wp-block-paragraph">【手順】<br>鍋に水とだしの素、大根を入れて煮込む。大根が透き通ってきたら油揚げ、大根の葉を入れて煮込む。火を止めて味噌を溶かし、わかめを入れて再び熱し、沸騰しない程度に温めたら完成。</p>
