<p class="wp-block-paragraph">僕が行けない日に畑の面倒を見てもらっている叔母が、「持って帰ったキュウリとナスは刻んで醤油かけてご飯にかけて食べる」というので、ほう……と興味を持った僕は山形のだし的な漬物を家でもこしらえてみることに。</p>



<p class="wp-block-paragraph">一時山形のだしブームみたいなのがあって、子供の頃にはよくご飯やら豆腐と食べたものです。ただ、最近はあんまり店でも見かけないし、食べたいと思ってもどう作れば……と思っていたところに、叔母の食べ方の提案が舞い込んできました。</p>



<p class="wp-block-paragraph">なあんだ、そんなに簡単なものでいいのか！</p>



<p class="wp-block-paragraph">レシピを検索してみると、何を入れるか、何で味付けするのか、どこまで凝るのかまで非常にさまざま！「100軒の家があったら100種類の味がある(※)」というのは本当のようです。</p>

<p class="wp-block-paragraph">叔母が言っていたのは、本当にキュウリとナスを刻んで醤油をかけていただけのまさに「easy」な山形のだしのようですが、自分で作るなら、もう少しだけ何か入れたいところ。元々農繁期のスピード料理で、「easy」なものではあると思いますが、僕なりの「easy」な山形のだしを作ってみたいと思います。</p>

<p class="wp-block-paragraph"><strong>1.</strong>キュウリとナスは「山形のだしといえばこれくらいだろう」と思う大きさに刻む。<br>ナスは水にさらしておき、アクが抜けたらキュウリと同じボウルに入れて塩揉みする。</p>

<p class="wp-block-paragraph"><strong>2.</strong>保存容器にキュウリとナスを入れ、みじん切りにしたしょうが、ハサミで切った出汁昆布、砂糖、九州醤油を入れてよく混ぜたら完成。<br>すぐでも食べられるし、一晩寝かせても。2〜3日ぐらいのうちに食べ切りましょう。</p>

<p class="wp-block-paragraph">山形のだしの具材はあんまりどこのレシピも変わらないけど、調味料がまるで違うのが面白いです。醤油だけは揺るがないけど、出汁の素やらみりん、酒、砂糖、まであれこれ入れるところもあれば鰹節と醤油だけの硬派なものまで。<br>スピード料理なのだから、あれこれ入れるのは面倒だと思い、<strong>すでにあれこれ混ざった九州醤油</strong>を使うことにしました。僕が住む関西でも、近年になってなのかどうかはわかりませんが、フンドーキンの醤油が手に入るのでそれを使いました。</p>

<p class="wp-block-paragraph">茹でて刻んだオクラとモロヘイヤと共に。野菜だけなのに、これを食べるとパワーが湧いてきます。まだまだ終わらない夏もこれで乗り切れそう。</p>

<p class="wp-block-paragraph">スパイスに興味を持ったなら、当然隣接<span class="fz-16px">(というか被ってる)</span>領域のハーブにも関心が……<br>なかなか向かなかったのは昔の話。</p>



<p class="wp-block-paragraph">なんといってもハーブの安定供給先がなかったからです。<br>フレッシュハーブは特に、スーパーだと欲しいときになかったりするし、農協直売所でも、はしっこのほうでこぢんまりと売られているだけ。<br>欲しいときに欲しいだけ手に入らないハーブの方向は向かないようにしてきました。</p>



<p class="wp-block-paragraph">ですが、今年の春、家の周りの草木をスッキリさせてスペースが空いたら、ハーブを育てる意欲がようやく湧いてきました。</p>

<p class="wp-block-paragraph">と誰かも言っている(？)し、実際育てて香りをかぐと、その芳しさに魅了され、庭に出るのが楽しみになりました。</p>

<p class="wp-block-paragraph">強健で、旺盛に育つから<strong>「ハーブを育てるのは簡単」というけれど、意外とそうではない</strong>……というのはまた別の話ということにしておいて、</p>



<p class="wp-block-paragraph">ハーブの使い道は数多くあれど、やっぱり僕としてはハーブティーとして飲むか、調理して食べるかのいずれか。食べることしか考えてない。<br>そんなハーブ料理の中でも、一番ハーブを使っていて楽しいのが<strong>「サルシッチャ」</strong>です。</p>



<p class="wp-block-paragraph">と、いっても腸には詰めないのですが。<br>ま、腸に詰めない簡易タイプのレシピも多いですし、僕もそれに倣って、適当に焼いて楽しんでいます。<br>ソーセージじゃないんだから、ソーセージ状にする必要もありませんしね。</p>



<p class="wp-block-paragraph">そのサルシッチャで今日はパスタです。せっかくなので、家で採れた野菜も入れましょう。</p>

<p class="wp-block-paragraph">10月になって、空気の味わいはすっかり秋だけど、まだまだ暑い！<br>なんと家の<strong>ゴーヤー</strong>はまだ採れます。<br>市場にはもう出回らない野菜も、採れる限りで楽しめるのが家庭菜園のよいところですね。</p>

<p class="wp-block-paragraph">ボウルに豚ひき肉、塩、刻むかすり鉢で細かくしたハーブ、ブラックペッパー、みじん切りにしたにんにくを入れてよく練る。</p>

<h4 class="wp-block-heading"><span id="toc4">サルシッチャとゴーヤーのトマトパスタの手順</span></h4>



<p class="wp-block-paragraph"><strong>1.</strong>フライパンに油を熱し、5mm厚に切ったゴーヤーを焼く。<br>軽く塩を振っておき、片面に焼き目がついたらひっくり返して焼き、裏側にも焼き目がついたら、フライパンに油を残すようにして取り出す。</p>

<p class="wp-block-paragraph"><strong>2.</strong>フライパンの油が足りなければ少し補い、サルシッチャの肉ダネを広げて焼く。<br>パスタに絡めることも考えながら、食べやすい大きさにヘラなどで切りながら焼く。<br>焼き目がついたらひっくり返し、にんにく、トマト缶を入れる。<br>パスタはだいたいこのあたりで茹で始めましょう。</p>

<p class="wp-block-paragraph"><strong>3.</strong>あまり触らず、トマト缶の水分をグツグツ煮て飛ばす。<br>このとき、サルシッチャを崩さないように。ミートソースになってしまいます。</p>

<p class="wp-block-paragraph"><strong>4.</strong>パスタの茹で汁を大さじ4～5杯ぐらい入れてトマトソースを延ばす。<br>ゴーヤーを戻し入れてザッと炒め、パスタが茹で上がるのを待つ。</p>

<p class="wp-block-paragraph">そこに、香ばしく焼いたゴーヤーの香味と苦味、そして奥から甘みが来て複雑な味わいを醸し出します。<br>各種ハーブ芳しいサルシッチャがゴーヤーと強力なタッグを組み、食べ終えるのが惜しくなる一品となりました。</p>

<p class="wp-block-paragraph">参考にさせていただいた日高シェフのレシピだと、サルシッチャを一気に1kgぐらい作って、真空パックの後冷凍保存していました。<br>家庭でそれは多いとしても、サルシッチャの肉ダネを多めに作ったのがいつも冷凍庫にある……なかなか垂涎ものの光景ですね。<br>「今日はサルシッチャで呑むぞ～」と朝に解凍を仕込むなんて、一日が楽しくなりそうです。</p>



<p class="wp-block-paragraph">食用ハーブを育てていて使い道に困ることがあれば、まとめてサルシッチャに突っ込む！というのも一興。<br>わっさーと育って使い切れなくなる前にどんどん使いましょう。</p>
