<p class="wp-block-paragraph">こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回はさっぱりとした印象の<strong>きゅうりと鶏むね肉</strong>に、ナンプラーなどの調味料と、スパイスを合わせて、<strong>ご飯が進む旨塩炒め</strong>を作ってみました。</p>



<p class="wp-block-paragraph"><strong>しっかり味付けした鶏むね肉</strong>は、<strong>桜エビとしょうが</strong>も相まって、<strong>ガツンとパンチ</strong>が来ます。<br>でも、<strong>元がさっぱりしているので、くどくならない</strong>のがポイント。</p>



<p class="wp-block-paragraph">食感と風味を残したきゅうりがアクセントになり、コリアンダーの香りも手伝って、<strong>食後感が気持ちよい炒めもの</strong>になりました。</p>

<p class="wp-block-paragraph">昔に鶏もも肉ときゅうりをオイスターソースで炒めてみたとき、意外にもすんなり食べられた<strong>「きゅうりの炒めもの」</strong>。</p>



<p class="wp-block-paragraph">今回は<strong>お供を鶏むね肉</strong>にしつつ、<strong>「旨塩タレ」で食べるきゅうりをイメージソース</strong>に、炒めものを作ってみました。</p>



<p class="wp-block-paragraph"><strong>鶏むね肉はブライン液に浸けることで、しっかり焼いても柔らかさが残ります。</strong><br>下味がついているので、炒めるときに加えるタレと相まって、しっかりとした味付けに。</p>



<p class="wp-block-paragraph"><strong>きゅうりの青い風味とパリシャク食感が清涼剤</strong>になり、食が進みます。</p>



<p class="wp-block-paragraph">ナンプラーは砂糖と酢を一緒に加えるだけでなく、コリアンダーを合わせることで、臭みを感じることはなく<span class="fz-14px">(個人差があると思いますが)</span>、旨みと塩味だけを利用することができます。</p>



<p class="wp-block-paragraph"><strong>しょうが、コリアンダー、香ばしさを出した桜エビなど、様々な風味が加わり、さっぱり素材でも満足感のある炒め物</strong>になりました。</p>

<p class="wp-block-paragraph"><strong>きゅうりと鶏むね肉</strong>という、<strong>さっぱり界の代表格</strong>のような組み合わせですが、<strong>しっかり味と香りをつけることで、意外なまでにご飯が進む炒めものになります。</strong></p>



<p class="wp-block-paragraph"><strong>衣のように桜エビとしょうがをまとった鶏むね肉</strong>は、しっかり味がついており、片栗粉とコリアンダーでとろみの付いたタレがよく絡んで、まさにご飯泥棒。</p>



<p class="wp-block-paragraph"><strong>きゅうりのパリシャク食感</strong>がさっぱりとさせてくれつつも、塩ダレきゅうりのような感じで、こちらでもご飯を食べられます。</p>



<p class="wp-block-paragraph"><strong>ちょっとピリ辛</strong>で、でもフワっと抜ける<strong>コリアンダーの甘く爽やかな香りが心地よい</strong>一品になりました。</p>

<h2 class="wp-block-heading"><span id="toc7">きゅうりと鶏むね肉の旨塩炒めの手順</span></h2>



<p class="wp-block-paragraph"><strong>0.(事前準備)</strong><br>鶏むね肉を縦に真ん中から両断し、繊維の向きとは反対に<strong>1～1.5cm厚</strong>の<strong>そぎ切り</strong>にする。<br>〈ブライン液〉の材料を全て混ぜたものを入れたボウルに入れて1晩ぐらい(6時間以上)浸けておく。</p>



<p class="wp-block-paragraph">お急ぎの場合は、塩3g、砂糖3gを鶏むね肉によく揉みこむ。</p>

<p class="wp-block-paragraph"><strong>1.</strong>鶏むね肉を〈ブライン液〉から出し、水気を切ったら片栗粉をまぶす。<br>きゅうりは皮を縞状に剥き、細長い乱切り(写真のものはだいたい5～6cm)にする。<br>〈合わせ調味料〉は全て混ぜておく。</p>

<p class="wp-block-paragraph"><strong>2.</strong>フライパンに油を敷き、弱めの中火で熱する。鷹の爪、しょうが、桜えびを熱して、しょうが、桜えびの香りが立ってきたら、中火にして鶏むね肉を焼く。</p>

<p class="wp-block-paragraph"><strong>3.</strong>鶏むね肉の<strong>片面にうっすら焼き目</strong>がついたらひっくり返して、裏面に火を通す。</p>



<p class="wp-block-paragraph">その後、きゅうり、塩、コリアンダー、合わせ調味料を入れてよく混ぜ、合わせ調味料を煮立たせつつ炒める。</p>
