<p>こんにちは。ハセガワタクミ(カルダモン26)です。今回はかつお出汁で煮てレンズ豆に旨みをたっぷり吸い込ませたほっこり優しいスリランカの豆カレー、<strong>「かつお出汁のパリップ」</strong>をご紹介します。</p>

<p>レンズ豆とココナッツミルクで作るスリランカの豆のカレー、「パリップ」。<br>スリランカのチキンカレーと一緒に食べようと思って作りました。<br>スリランカでよく用いられるかつおぶしの一種、モルディブフィッシュの代わりに、仕上げにかつおぶしを入れるレシピを最初は考えていました。</p>



<p>でも、試作で作ったそのパリップはかつおぶしが強すぎて、スプーンが進まない……</p>



<p>豆とココナッツミルクが優しすぎて、かつおぶしの主張に負けてしまいました(市販のかつおパック1袋は多すぎたかもしれない)。</p>



<p>ならば、かつお出汁で煮たらどうだろうと再び作成。この目論見は当たり、<strong>かつお出汁を吸い込んだレンズ豆でほっこり優しいパリップ</strong>が完成しました。</p>



<p><strong>同じくかつお出汁で煮た<a href="https://spicefull-life.com/srilanka-tsunadashi-chickencurry/" data-type="URL" data-id="https://spicefull-life.com/srilanka-tsunadashi-chickencurry/" target="_blank">スリランカ式チキンカレー</a>との相性も抜群。</strong>用意したバスマティライスが一瞬でなくなりました。</p>

<h2 class="wp-block-heading">かつお出汁のパリップの手順</h2>



<p>【手順】<br><strong>1.</strong>かつお出汁をひく。<br>水に昆布を入れて30分以上置いてから鍋を弱めの中火にかけ、10分以上、沸騰させないように煮出す。昆布を引き上げて一度沸騰させたらかつおぶしを入れて2～3分放置する。その後濾しておく。</p>

<p><span style="font-size: 16px;">「かつお出汁のスリランカ式チキンカレー」と同時に作るときは、水900cc、昆布10g、かつおぶし10gで、一緒に出汁をひくのがおススメ。<br>出汁をひく過程で水は目減りしてしまうので、丁度良いぐらいの量になるはず。足りなければ水を少し足してください。</span></p>

<p><strong>2.</strong>レンズ豆は水で軽く洗い、5分ほど浸水させたらザルに上げる。</p>

<p><strong>3.</strong>フライパンにマスタードシードと油を入れて中火で熱する。パチパチと跳ねてきたらフタをして音が止むまで待つ。音が止んだらフタを外してシナモンを入れ、シュワシュワと泡が立ち、シナモンの甘い香りがしてくるまで加熱する。</p>

<p><strong>4.</strong>玉ねぎを入れて、しんなりするまで炒める。しんなりしたら弱火にして〈パウダースパイス〉とカレーリーフ、塩を加え、よく混ぜる。</p>

<p><strong>5.</strong>レンズ豆を加えてよく混ぜたらかつお出汁を注ぎ、沸いてきたら弱火にしてフタをし、10分煮る。</p>

<p>そのままでは少しかつおぶしがキツいと感じたパリップですが、かつおぶしそのままからをかつお出汁に置き換えることで、口当たりがソフトで優しい日本人好みのパリップになったのではないかと思います。</p>



<p>インドカレーよりもスッキリと優し目に寄っているスリランカ式のカレーは非常に好みなので、これからもちょこちょこ更新していきたいと思います。</p>

<p>こんにちは。ハセガワタクミ(カルダモン26)です。<br>今回は、<strong>あいがけカレーにピッタリ</strong>な<strong>豆のカレー</strong>、<strong>「ホタテ豆乳ダルカレー」</strong>のご紹介です。<br>カレー料理店ではよく提供される豆のカレー、「ダルカレー」ですが、あまり家で作る印象が薄いのではないかと感じています。</p>



<p><span class="marker-under"><strong>大豆などとは違い、日本ではあまり馴染みのない豆</strong></span>を使うということもあり、味の想像ができなかったりして手を出しにくいかもしれませんが、<strong>馴染み深い食材を加えて、食べやすく仕上げたレシピ</strong>なので、<strong>ぜひ最後までご覧ください</strong>。</p>



<p>この<strong>「ホタテ豆乳ダルカレー」</strong>は、<strong><span class="marker-under-red">和の素材をベース</span></strong>に、<strong>ボイルホタテを加えてコクとダシ感のあるスープ</strong>を、<strong><span class="marker-under-red">クセが少なくて柔らかく食べやすい「レンズ豆」</span>に吸わせた</strong>ダルカレーです。</p>

〈昆布ダシ〉
・水・・・・300cc
・昆布・・・3g

〈レンズ豆の下茹で〉
・レンズ豆(ひきわり) ・・・乾燥50g
・ターメリック・・・・・・小さじ1/4
・油・・・・・・・・・・・小さじ2
・水・・・・・・・・・・・豆が浸かるほど

・油・・・・・・・・・・大さじ1
・玉ねぎ・・・・・・・・100g(0.5cmの薄切り)
・玉ねぎ脱水用の塩・・・1g
・生姜・・・・・・・・・1片
・塩・・・・・・・・・・3g
・ボイルホタテ・・・・・6〜7個(100g程度)

〈スタータースパイス〉
・マスタードシード・・・小さじ1/4
・鷹の爪・・・・・・・・1本

〈パウダースパイス〉
・コリアンダー・・・・・小さじ2
・ターメリック・・・・・小さじ1/4

・無調整豆乳・・・100ml

<h2 class="wp-block-heading">ホタテ豆乳ダルカレーの手順</h2>



<p>【手順】<br><strong>1.</strong>鍋に水300ccと昆布を入れて30分以上置いておく。10分間かけて弱めの中火で熱し、沸騰させないように昆布ダシを取る。昆布は捨てずに取っておく。</p>



<p><strong>2.</strong>レンズ豆は軽く洗い、鍋に豆が浸かるほどの水を沸かし、油とターメリックを入れたら、豆を入れて10分茹でる。その後ザルに上げておく。</p>

<p><strong>3.</strong>フライパンに油とマスタードシードを入れ、中火で熱する。跳ねてきたらフタをして弱火にし、音が止んだら鷹の爪を入れて、色が変わるまで熱する。</p>

<p><strong>4.</strong>強めの中火にして、玉ねぎと脱水用の塩を入れたら、薄く広げて2～3分放置する。色づいてきたら差し水を2回して、焦げを溶かし、水分を飛ばしながら全体をきつね色にする。</p>



<p><strong>5.</strong>しょうがを入れて1分ほど炒め、香りを立たせたら、弱火にして〈パウダースパイス〉と塩を入れて、粉っぽさがなくなるまでよく混ぜる。</p>

<p><strong>6.</strong>ボイルホタテを入れて、<strong>5.</strong>がよく絡むように混ぜる。それを鍋に移したら、<strong>1.</strong>の昆布ダシと<strong>2.</strong>の豆も入れて、煮立たせたら弱火で10分煮込む。</p>

<p><strong>7.豆乳</strong>を入れて、<strong>沸騰させないように</strong>温める。<strong>昆布を戻し入れて10分蒸らし</strong>たら、昆布を除いて、<strong>バターを入れて完成</strong>！温めるときは沸騰させないように注意してください(豆乳が固まります)。</p>
