<p class="wp-block-paragraph">塩とスパイスでマグロの美味しさを引き出した<strong>「マグロの塩サイコロステーキ」</strong><br>根菜と相性の良いクミンシードが弾けるきんぴらは新定番の味わい<strong>「クミンきんぴら」</strong><br>ターメリックで和えた野菜が色鮮やかな、<strong>「キャベツのスパイス味噌汁」</strong>です。</p>



<h4 class="wp-block-heading"><span id="toc5">定食のポイント</span></h4>



<p class="wp-block-paragraph">メインのマグロが塩味であっさりしているので、きんぴらはしっかり目に味を付けました。あとは味噌汁を添えれば、一気に定食に！</p>



<p class="wp-block-paragraph">野菜を炒めてから味噌汁にすると、汁物というよりも一つのおかずのような満足感が得られます。</p>

<p class="wp-block-paragraph">塩とスパイスでマグロの美味しさを楽しみます。タイムが香れば、一気に「っぽく」なります。醤油味が多くなりがちな魚のステーキですが、さっぱりいただけます。</p>

・マグロ・・・300g(一口大のサイコロ状)
・塩・・・・・3g

・<strong>ブラックペッパー</strong>・・・5粒(ミルで挽く)
・<strong>タイム</strong>・・・・・・・・0.5g(あれば)

・<strong>にんにく</strong>・・・2片(10g程度)
・油・・・・・・大さじ1</pre>



<p class="wp-block-paragraph">【手順】<br><strong>1.</strong>マグロを一口大のサイコロ状に切り、塩、タイム、ブラックペッパーをまぶす。</p>

<p class="wp-block-paragraph"><strong>2.</strong>にんにくはスライスし、フライパンに油とにんにくを入れ、弱火でじっくりとにんにくを色づける。焦がさないように注意しながら、にんにくチップを作る。</p>

<p class="wp-block-paragraph"><strong>3.</strong>にんにくチップは取り出し、にんにくの香りが移った油で1.のマグロを中火で焼く。6面をサッと焼いたら取り出す。刺身用なら、中がレアでも大丈夫。</p>

<p class="wp-block-paragraph"><strong>4.</strong>最後ににんにくチップを載せて、一緒に頂きます。あっさりした味なので、つけ塩を用意したり、ポン酢でも。</p>



<h3 class="wp-block-heading"><span id="toc8">副菜：クミンきんぴら</span></h3>

<p class="wp-block-paragraph">根菜にはやっぱりクミンがよく合います。一応、レシピではごぼうが多めになっていますが、にんじんが多めでも美味しいですし、れんこんを入れてもグッドです。余った根菜消費にどうぞ。</p>

・ごぼう・・・・・・100g(ささがき)
・にんじん・・・・・50g(細切り)
・こんにゃく・・・・50g(細切り)

・油・・・・・・・・大さじ1
・<strong>クミンシード</strong>・・・ひとつまみ(約1g)
・<strong>鷹の爪</strong>・・・・・・1本(好みで)

・酒・・・・・・・・大さじ1
・みりん・・・・・・大さじ1
・濃口醬油・・・・・大さじ1

・<strong>炒りごま</strong>・・・・・適量</pre>



<p class="wp-block-paragraph">【手順】<br><strong>1.</strong>ごぼうはささがきにして水にさらす。にんじんは細切りに、こんにゃくは細切りにした後、2～3分茹でてアク抜きをする。</p>



<p class="wp-block-paragraph"><strong>2.</strong>フライパンに中火で油を熱し、クミンシードと鷹の爪を入れて30秒ほど加熱する。クミンシードからシュワシュワと泡が出てきたら、ごぼう、にんじん、こんにゃくを入れて、油が馴染むまで炒める。</p>

<p class="wp-block-paragraph"><strong>3.</strong>酒、みりん、濃口醬油を入れて、汁気が飛ぶまで炒める。<br>　仕上げに炒りごまを入れて完成。</p>

<p class="wp-block-paragraph">野菜を炒めてから作る味噌汁は、おかずの一品と言っても良い満足感。<br>炒める前にターメリックを野菜に和えておくと、色鮮やかに。<br>仕上げに入れる生姜がポイント。</p>

・キャベツ(ざく切り)
・にんじん(短冊切り)
　2つの野菜で合計200g
・<strong>ターメリック</strong>・・・1g

・油揚げ・・・・・・10～20g

・<strong>クミンシード</strong>・・・ひとつまみ(約1g)
・油・・・・・・・・小さじ2

・水・・・・・・汁椀2杯分(約400cc)
・ダシの素・・・2g

・味噌・・・・・大さじ1～
・<strong>しょうが</strong>・・・5g(すりおろし)</pre>



<p class="wp-block-paragraph">【手順】<br><strong>1.</strong>キャベツとにんじんは、ボウルでターメリックと和える。油揚げは油抜きして、短冊状に切る。</p>

<p class="wp-block-paragraph"><strong>2.</strong>小鍋に水を沸かしつつ、フライパンに油を中火で熱し、クミンシードを入れて30秒ほど加熱する。泡がシュワシュワと出てきたら、ターメリックで和えた野菜を炒め、粉っぽさがなくなって鮮やかな色が出るまで炒める。</p>

<p class="wp-block-paragraph"><strong>3.</strong>ダシの素(今回使ったのは「ほんだし」)を溶かし、炒めた野菜と油揚げを入れて2～3分煮る。</p>
